Hey Folks, I cannot wait any longer!
Regular followers will know the weather here in Scotland has been pretty dire lately, to say the least.
What no summer? So far, yep! So, let’s bring on the salads anyway, starting with this zingy king prawn and rocket salad. There’s plenty of nutritional goodness here to brighten up any dull lunchtime, dinner or lack of summer!
Just imagine getting stuck in to these succulent juicy prawns, coated with the zesty tasting lime and soy dressing. It’ll put a smile on your face and good healthy food in your tummy. You’ll soon forget about whatever weather it is outside! 😀
How did this king prawn and rocket salad recipe come about exactly?
Well it was in June last year, when Lynne and I had a weekend camping break in Berwick upon Tweed.
We visited a bistro for lunch (I forget its name, sorry) and I ordered, and had, the most amazing cray fish and rocket salad there.
So this is my attempt to recreate that.
Since then this recipe has been on the to-do list but I’ve never quite got round to actually getting any cray fish to make it.
I mean you CAN get cray fish, and they will work perfectly if you use them instead of the prawns, but as prawns are more readily available and cheaper here, I decided to use them instead.

I find this king prawn and rocket salad really is a quick salad to put together, and there’s no cooking involved. It’s been one of my favourites to take to work.
Thanks to all of you who posted and mailed me good luck and congratulations for my new job, which I started on Monday. 😀
It’s early days yet and a lot of work for me to get up to speed with the project that I’m managing, but I am thoroughly enjoying it so far. What’s more they’ve all made me feel thoroughly welcome.
There’s ample fresh coffee on tap, plus I have 3 screens. Yes, I have moved up from double screens in my previous job(s) to now having 3 screens to work from. Absolutely awesome!
Does that do it for anyone else too, or is it just me? 😕
Cooking wise there’s even an oven and hob. Could I be cooking a Neil’s Healthy Meal there one day?
It’s a confidential project I’m working on, so apologies but that’s as much as I’m going to say about it here!
As Monday is a bank holiday here, Lynne and I have got such a great long weekend to look forward to.
Friday night we are off to see Belle and Sebastian at the Glasgow Hydro, they are one of my favourite bands and I haven’t seen them live in years, so excited!
Saturday night is Eurovision night, when the countries of Europe enter their best song and all complete against each other to attain the highly acclaimed winning title.
It’s such a laugh watching it on TV, to watch all the countries wielding their political feelings towards their neighbouring countries by awarding less points for those they don’t like and giving more to those they do! 😆
Sunday I’ll hopefully be getting this months’ latest cheesecake recipe photographed for publishing on Tuesday. And who knows on Monday I may even get the grass cut. Ha ha ha ha…….. 😉
But that’s my thinking out loud thoughts for today so thanks to Amanda for hosting at Running with Spoons , I hope you can check out what’s going on over there! And have a great weekend! 😀
