Prepare the lime and soy dressing by combining all the dressing ingredients into a jar, giving it a good shake and popping it into the fridge for at least 20 minutes.
Salad:-
Divide the rocket leaves between two.
Top each portion with half of the prawns, onion slices, chopped tomatoes, cucumber slices and garnish with the freshly chopped coriander.
Serve with the lime and soy dressing drizzled over.
