Sweet Potato and Mozzarella Burgers

With a slice of mozzarella cheese within, these tasty vegetarian burgers are an excellent meat free alternative that kids (and adults) will love!

Ingredients

  • 3 medium sized sweet potatoes peeled and chopped
  • 1 small red onion diced
  • 2 garlics cloves crushed
  • ½ teaspoon red chilli powder
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 medium sized egg beaten
  • Salt and pepper to season
  • 125 g lighter mozzarella cut into 4 slices
  • 80 g breadcrumbs mixed with 2 tbsp. grated parmesan
  • 2 tablespoon vegetable oil

Instructions

  • Cook the potatoes until soft, drain and leave aside to cool.
  • Heat 1 tbsp. of vegetable oil in a small pan and sauté the onion and garlic, leave aside for a few minutes to cool.
  • Mash the potatoes and place them in a large bowl with the onion, garlic, red chilli powder, ground cumin, ground coriander and beaten egg and mix together well.
  • Form patties, using your hands, around each slice of mozzarella with the sweet potato mixture, season to taste and then cover thoroughly with the breadcrumbs.
  • Heat the other tbsp. of vegetable oil and gently fry both sides of each burger until golden brown.

Notes

These freeze and can be easily reheated for another day.
