Pea and Mint Soup

Pea and mint soup is cheap to make as it’s made from frozen peas. This is a great lunchtime staple it’s really easy to make and its delicious and creamy!

Ingredients

  • Low calorie cooking spray
  • 1 large onion , diced
  • 650 g frozen peas
  • 20 g mint leaves , stalks removed
  • 1 L vegetable stock
  • Salt and freshly ground pepper for seasoning

Instructions

  • Spray the bottom of a saucepan with the low calorie spray 5 times. Turn the heat on high underneath, then when the spray begins to bubble turn the heat down to medium.
  • Add the onion to the pan and sauté for about 5 minutes until soft. Stirring constantly and adding drops of hot water if the onions begin to stick to the pan.
  • Add the frozen peas, mint leaves and vegetable stock.
  • Bring the soup to the boil and then turn down the heat to allow the soup to simmer for approximately 20 minutes until the peas are fully cooked.
  • Blitz the soup in a blender / food processor until pureed.
  • Return to the pan and then season to taste.
