📋 Quorn Chilli

Quorn chilli is a delicious alternative to beef chilli. This healthy vegetarian family Quorn chilli recipe is one that even meat eaters will enjoy!

Ingredients

  • 500 g Quorn Mince
  • Low Fat Cooking Oil Spray
  • 1 Onion, diced ,diced
  • 3 Cloves Garlic ,crushed
  • 2 400g cans of red kidney beans ,rinsed and drained.
  • 2 400g cans of chopped tomatoes.
  • 300 ml vegetable stock.
  • ½ teaspoon salt
  • ½ teaspoon ground black pepper
  • 1 teaspoon mild chilli powder
  • ½ teaspoon ground cumin
  • ¼ teaspoon cayenne pepper
  • ¼ teaspoon ground cinnamon.
  • 30 g dark chocolate (70% cocoa dark chocolate) broken into small pieces

Instructions

  • Spray the bottom of a large casserole pot with cooking spray.
  • Sauté the onion and garlic for about 5 minutes. Add splashes of hot water if the mixture begins to stick.
  • Add the Quorn mince to the onion and garlic, stir until well combined over a low heat for 2 minutes.
  • Add the red kidney beans, chopped tomatoes, stock, all of the spices and all of chocolate. Bring to a boil.
  • Allow the chilli to simmer for at least 15 minutes. Stirring a couple of times throughout. Then Serve.
