This couscous Greek salad with home-made dressing is a delicious, filling and easy to make summer salad packed with lots of healthy goodness. Made in just 20 minutes!

Ingredients

Home-Made Dressing: -

  • 2 tablespoon red wine vinegar
  • 3 tablespoon olive oil
  • 2 garlic clove crushed
  • Freshly ground salt and pepper

Couscous Greek Salad :-

  • 100 g Couscous
  • 2 large ripe tomatoes diced
  • 2 inch piece of cucumber sliced then quartered
  • ½ red onion thinly sliced
  • 16 Black olives from a jar
  • 75 g feta cheese crumbled
  • 2 tablespoon fresh parsley chopped

Instructions

Home-Made Dressing: -

  • Place red wine vinegar, olive oil and garlic into a jar with a lid and shake well.
  • Season to taste with salt and pepper.

Couscous Greek Salad :-

  • 1) First cook your Couscous by placing it in a bowl and pour freshly boiled water over it, covering roughly 1cm / ½”. Stir and cover with a plate and set aside for 5 minutes. After 5 minutes, use a fork to fluff up the grains and set aside to cool.
  • 2) Combine the cooled couscous, tomatoes, cucumber, red onion and olives in a large bowl.
  • 3) Add the red wine vinegar dressing and combine with the salad.
  • 4) Divide the couscous salad between two serving plates and crumble the feta cheese over and garnish with the chopped parsley.
