Slow cooker burritos made with budget ingredients are a delicious and easy way to feed the family without spending hours in the kitchen!

Ingredients

  • 2 tins chopped tomatoes
  • 3 tablespoon salsa sauce
  • 1 clove garlic crushed
  • ¼ teaspoon cayenne pepper
  • ¼ teaspoon cumin powder
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 2 teaspoon hot chilli powder
  • 1 tin Mexican style bean mix*
  • 150 g brown rice
  • 100 g frozen sweetcorn
  • 150 ml vegetable stock
  • 8 corn flour tortillas

Instructions

  • Place all ingredients, except the tortillas into the slow cooker. Stir well and cover.
  • Cook on low for 6 hours until most of the liquid has been absorbed by the rice.
  • Lay out a tortilla. Place mixture in the centre. Pull the bottom half over to meet the top half. Fold the left side in, then the right side then tightly roll your tortilla until you have perfect beautiful burrito.
