Dark Chocolate Chip Cranberry Cookies

Dark chocolate chip cranberry cookies are delicious sweet soft and chewy holiday treats. The combination of melted dark chocolate chips and sweet cranberries are irresistible!

Ingredients

  • 250 g butter at room temperature
  • 200 g light brown muscovado sugar
  • 75 g caster sugar
  • 2 teaspoon vanilla extract
  • 2 large eggs
  • 300 g plain flour
  • 1 teaspoon bicarbonate of soda
  • 80 g dried cranberries
  • 80 g dark chocolate chips

Instructions

  • Pre-heat your oven to 180°c. Lightly grease a couple of baking trays.
  • In a large mixing bowl, beat together the butter and both sugars until creamy.
  • Add the vanilla extract and eggs, beat well into the creamy mixture.
  • Fold in the flour, bicarbonate of soda, dried cranberries and dark chocolate chips. The dough should be of a smooth consistency.
  • Tear off golf ball sized pieces, roll them into balls using your hands, place them on the baking sheet about 5cm apart and press down slightly to flatten them.
  • Place the cookies in the oven and bake for 15 - 20 minutes until golden brown and cooked through.
  • Remove from the oven, transfer to a wire rack and allow to cool completely.

Notes

Keep the cookies in an air-tight sealed container. The cookies will be good for a week.
