📋 Festive Nut Roast

Festive nut roast is the perfect easy to make vegetarian option for your Christmas table. Served as a main or a side dish this delicious Christmas nut roast recipe is packed with flavour.

Ingredients

  • Cooking oil spray
  • 350 g assorted nuts.
  • 60 ml sunflower oil
  • 1 large onion chopped
  • 2 garlic cloves crushed
  • 180 g spinach chopped
  • 50 g plain flour
  • 50 g wholemeal breadcrumbs
  • 1 large carrot peeled and grated
  • 400 g can chopped tinned tomatoes
  • 1 egg beaten
  • 1 teaspoon of chilli flakes
  • 50 g dried cranberries
  • 2 tablespoon curly parsley chopped
  • Freshly grated salt and pepper

Instructions

  • Preheat oven to 180 degrees.
  • Place nuts*, oil, onion, garlic, and spinach in a food processor. Blitz until well combined.
  • Empty processor contents into a large mixing bowl and stir in all the other ingredients until well combined too.
  • Using the cooking oil spray, lightly spray 2 loaf tins and then line them with greaseproof paper.
  • Empty the nut roast mixture into the loaf tins and press down to ensure tins are filled to the corners and smooth out the top with a palette knife.
  • Place in the oven for 45 minutes until firm and top is browned but not burnt
  • Turn out loaves onto a chopping board to carve up slices.
  • Serve warm with cranberry sauce.

Notes

*if your assorted nuts are still whole you might want to blitz them in your food processor first until they are chopped more finely.
