📋 Festive Nut Roast

Instructions
Preheat oven to 180 degrees.
Place nuts*, oil, onion, garlic, and spinach in a food processor. Blitz until well combined.
Empty processor contents into a large mixing bowl and stir in all the other ingredients until well combined too.
Using the cooking oil spray, lightly spray 2 loaf tins and then line them with greaseproof paper.
Empty the nut roast mixture into the loaf tins and press down to ensure tins are filled to the corners and smooth out the top with a palette knife.
Place in the oven for 45 minutes until firm and top is browned but not burnt
Turn out loaves onto a chopping board to carve up slices.
Serve warm with cranberry sauce.
Notes
*if your assorted nuts are still whole you might want to blitz them in your food processor first until they are chopped more finely.
