  • ½ teaspoon cumin seeds
  • 1 teaspoon paprika
  • 1 teaspoon cayenne pepper
  • ½ teaspoon freshly ground pepper
  • ½ teaspoon dried oregano or dried thyme

For The Chicken Pasta

  • 700 g skinless chicken breasts cubed.

  • 2 cloves garlic crushed
  • 1 medium onion diced
  • 1 medium red or green pepper sliced
  • 75 g button mushrooms sliced
  • 1 x 400g tins of chopped tomatoes
  • 225 g whole wheat penne pasta
  • 450 ml chicken stock
  • 4 tablespoon low fat cream cheese
  • Freshly ground salt
  • 1 tablespoon freshly chopped parsley

Instructions

For The Cajun Seasoning

  • Grind all the spices in a pestle and mortar or a spice grinder until a fine powder is formed.

For The Cajun Chicken Pasta

  • Place the chicken cubes in a large bowl and coat them equally in the ground spices.
  • Gently heat the olive oil in a large pot. Add the chicken and cook stirring until no longer pink, about 5 minutes. Remove chicken from pot using a slotted spoon.
  • Add the garlic, onion and chosen pepper to the pot and sauté until tender in the chicken juices for about 3 to 4 minutes then add the mushrooms. Cook for a further 2 minutes until all the juices are absorbed.
  • Add the chicken back into the pot then stir in the tomatoes, pasta, and chicken stock. Bring to the boil and then turn down to simmer for about 10 minutes until the pasta and chicken are cooked.
  • Turn off the heat and stir in the cream cheese.
  • Season to taste with the salt and serve the chicken in bowls garnished with the freshly chopped parsley.

Notes

If you do not have the time or correct spices to make the Cajun seasoning you can substitute with 2 tablespoon shop bought Cajun seasoning.
