📋 Cherry Bakewell Flapjacks
Delicious cherry bakewell flapjacks. These easy to make baked oat bars are made from porridge oats, filled with cherry jam and topped with flaked almonds.

115 g unsalted butter or cooking margarine 115 g soft light brown sugar 3 tablespoon honey 230 g porridge oats 25 g ground almonds 1 tablespoon almond extract 4 tablespoon cherry jam 25 g flaked almonds
Preheat oven to 180C (fan).
Grease and line the bottom and sides of a 20cm x 20cm square baking tin with greaseproof / parchment paper.
In a medium pan, gently melt the butter/margarine, sugar, and honey over a low heat until softened.
Stir in the oats.
Remove from the heat and stir in the ground almonds and almond extract.
Spoon half of the oat mixture into the baking tin and press down all over.
Spread the cherry jam over the oat mixture but leave about 0.5cm around the edges.
Spoon the rest of the oat mixture over the jam and press down all over again. Then sprinkle over the flaked almonds.
Bake for about 20 minutes on the middle shelf of your oven.
Remove from oven, mark into 9 squares whilst still hot, then remove from the pan when cool and carve into 9 squares.
