📋 Easy Butter Bean Soup
This easy butter bean soup recipe is a delicious tomato based soup packed with vegetables that's both thick and filling!

Low calorie cooking oil spray or 1 tablespoon olive oil 1 medium onion diced 2 cloves garlic crushed 2 large carrots peeled and sliced 90 g frozen peas 1 tablespoon tomato puree 1 teaspoon paprika 400 g tin chopped tomatoes 400 g tin butter beans drained and rinsed 500 ml vegetable stock A palm full of basil leaves Freshly Ground Salt and Black Pepper
Spray the bottom of a large saucepan, about 5 times, with the low cal olive oil spray Turn on a high heat under the pot and wait until the oil bubbles, then turn down to a low heat or you could also use 1 tbsp. olive oil.
Sauté onion until soft about 5 minutes then stir in the garlic and sauté for a further 2-3 minutes.
Add the carrots and frozen peas stir around for about 1 minute.
Stir in the tomato puree and paprika and stir around for about 1 minute.
Add the tin of tomatoes, drained butter beans and vegetable stock.
Bring the mixture to the boil and then turn down the heat to a simmer for approximately 10 minutes.
Season to taste and garnish with some of the torn basil leaves.
