📋 Baked Cajun Stuffed Chicken Breast

Baked Cajun stuffed chicken breast. Delicious chicken breasts stuffed with Cajun cheesy goodness. This easy recipe makes dinner amazing!

Ingredients

For the Cajun Seasoning: -

  • 1 teaspoon caraway seeds
  • 1 teaspoon cumin seeds
  • 2 teaspoon paprika
  • 1 teaspoon cayenne pepper
  • ½ teaspoon freshly ground pepper
  • 1 teaspoon dried oregano or dried thyme

For the Baked Stuffed Chicken: -

  • 1 tablespoon olive oil
  • 100 g button mushrooms sliced
  • ½ green bell pepper diced
  • ½ red bell pepper diced
  • 1 tomato diced
  • 4 chicken breasts. About 1 Kg.
  • 75 g grated mozzarella
  • Cooking oil spray
  • Salt and freshly ground black pepper

Instructions

For The Cajun Seasoning: -

  • Grind all the spices in a pestle and mortar or a spice grinder until a fine powder is formed.

For The Baked Stuffed Chicken: -

  • Preheat oven to 200C (Fan) and lightly grease a baking dish.
  • Heat the oil in a non-stick frying pan and sauté the mushrooms and diced pepper for 4 - 5 minutes until softened.
  • In a small bowl mix together the sautéed vegetables, Cajun seasoning, and diced tomato.
  • Slit the chicken breasts with a sharp knife horizontally (but not all the way through) and open them up.
  • Spread each open chicken breast with equal amounts of the Cajun mushroom pepper tomato mixture on one side. Then scatter over an equal amount of the grated mozzarella.
  • Fold other side of chicken over on top and place a toothpick in each end to hold it together.
  • Place each chicken breast in the greased baking dish. Lightly spray with some cooking oil and season with the salt and pepper.
  • Bake for about 25 minutes until chicken is cooked through. Allow to sit for a few minutes and remove toothpicks before serving.

Notes

*You can make this with shop bought Cajun seasoning if you want to save time. The nutritional label is for making the recipe with the homemade seasoning though.
