- 300 g dried linguine
- 1 tablespoon olive oil
- 2 cloves garlic crushed
- 200 ml low fat crème fraiche
- 2 tablespoon lemon juice
- 320 g raw and peeled king prawns peeled and de-veined
- 60 g parmesan cheese grated
- 2 tablespoon flatleaf parsley chopped
- Freshly Ground Salt and Black Pepper
Cook the linguine according to package instructions in salted boiling water until al dente, drain and set aside.
Whilst the pasta is cooking gently heat the oil in a large skillet or non-stick frying pan over a medium heat and sauté the garlic for about 1 – 2 minutes.
Stir in the crème fraiche and lemon juice and when it starts to bubble turn down to simmer.
Add the prawns and allow to simmer for 2 - 3 minutes, stirring occasionally until they are completely pink but not overcooked and rubbery.
Remove from the heat, stir in the parmesan, parsley, and season to taste.
Combine the drained pasta with the prawns and sauce. Serve Immediately.
