2 tablespoon olive oil 2 cloves of garlic crushed. 1 large onion sliced. 1 large carrot diced. ½ teaspoon dried oregano ½ teaspoon paprika 400 g tin chopped tomatoes. 1 kg chicken breasts cut into bite size chunks pieces. 1 kg white potatoes peeled and cut into small pieces. Freshly Ground Salt and Black Pepper
Gently heat the olive oil in a large casserole pot and sauté the garlic and onion for about 5 minutes until softened.
Add the carrot and continue to cook everything for a further 2 minutes.
Stir in the oregano, paprika and tomatoes cook until simmering.
Add the chicken and potatoes, mix well, and cover the pan with a lid and cook, simmering on a low heat for about 45 minutes. Stirring occasionally to prevent sticking to the bottom.
Season to taste and serve.
