Ingredients

  • 325 g puff pastry sheet ready rolled.
  • 1 tablespoon olive oil
  • 1 small onion thinly sliced.
  • 400 g white mushrooms sliced.
  • 2 cloves garlic crushed.
  • 100 g hard goat’s cheese grated.
  • Salt and Freshly Ground Black Pepper

Instructions

  • Preheat oven to 200C fan.
  • Roll out the pastry and place it on a baking sheet / tray. Score an edge, about 2cm around the puff pastry. Prick the pastry using a fork a few times.
  • Gently heat the olive oil in a suitably sized pan and sauté the onion until soft, about 3 minutes then add the mushrooms and garlic and cook until the mushrooms are soft too and the liquid has been absorbed, about a further 3 minutes.
  • Spread the mushroom mixture over the pastry avoiding the edges.
  • Sprinkle the grated goat’s cheese evenly over the top and season the tart with the salt and pepper.
  • Brush the edge with a little olive oil.
  • Bake in the top of your oven for 15-20 minutes until pastry has risen, turned golden brown and cheese has melted.
  • Serve with a green or tomato salad.
