Cut chicken breasts lengthwise into strips about 0.5cm / ½ inch thick.
In a small bowl mix together the desiccated coconut, breadcrumbs, garlic, paprika, cayenne pepper, flour, and season.
In a separate bowl mix whisk together the beaten egg and milk
Dip each chicken strip into the egg then into the coconut breadcrumbs mixture and place on a baking tray.
Place the baking tray into the oven and bake for 8 minutes then turn the chicken over and bake for a further 8 minutes until each piece is brown and crispy.
