📋 Healthy Baked Chicken Strips

These healthy baked chicken strips are soft and crunchy on the outside and tender in the inside. They're delicious and much healthier than fried too!

Ingredients

  • 400 g boneless skinless chicken breasts
  • 50 g desiccated coconut.
  • 50 g wholemeal breadcrumbs
  • 1 garlic clove crushed.
  • 1 teaspoon paprika
  • 1 teaspoon cayenne pepper
  • 70 g plain flour
  • Freshly Ground Salt and Black Pepper
  • 1 egg beaten.
  • 1 tablespoon skimmed milk

Instructions

  • Preheat oven to 180C Fan.
  • Cut chicken breasts lengthwise into strips about 0.5cm / ½ inch thick.
  • In a small bowl mix together the desiccated coconut, breadcrumbs, garlic, paprika, cayenne pepper, flour, and season.
  • In a separate bowl mix whisk together the beaten egg and milk
  • Dip each chicken strip into the egg then into the coconut breadcrumbs mixture and place on a baking tray.
  • Place the baking tray into the oven and bake for 8 minutes then turn the chicken over and bake for a further 8 minutes until each piece is brown and crispy.
