This delicious breakfast couscous is a naturally sweet and filling alternative breakfast option to porridge.

Ingredients

  • 55 g Couscous
  • 30 g sultanas
  • 30 g dried cranberries
  • 30 g chopped dried apricots
  • 1 tablespoon flax seeds optional
  • 150 ml skimmed milk
  • No fat Greek yogurt

Instructions

  • Place couscous, sultanas, cranberries, dried apricots and flax seeds into a breakfast bowl or airtight container (if making overnight couscous) and mix together.
  • Heat the milk in a small saucepan, constantly stirring it, and once it begins to steam, remove the pan from the heat and pour the hot milk into your breakfast bowl or airtight container. Mix together a little.
  • Cover the bowl with a plate or loosely with lid and leave it to stand for 10 minutes untouched.
  • Top with yogurt and serve straight away if eating fresh or store container, sealed overnight in fridge if eating the next day.
