Ingredients

  • 1 ½ teaspoon . vegetable oil
  • 1 onion finely chopped
  • 2 cloves garlic crushed
  • 500 g lean turkey mince
  • ½ teaspoon ground coriander
  • ½ teaspoon ground ginger
  • ½ teaspoon mild chilli powder
  • 1 teaspoon garam masala
  • Low fat cooking spray
  • 12 filo pastry sheets

Instructions

  • Spray a little oil onto an oven tray and rub all over with your fingers to very lightly grease it
  • Pre-heat oven to 180C fan
  • Heat the vegetable oil in a medium sized pan over a medium heat
  • Sauté the onion and garlic until soft, approximately 3 to 4 minutes
  • Add turkey mince, breaking it down with a fork, coriander, ginger, chilli powder and garam masala. Cook, stirring for about 10 minutes until the mince has browned and all the spices are absorbed, and set aside.
  • Take one sheet of filo pastry, spray it with the low fat cooking spray and fold it in half lengthways, then spray it again so you have a long strip (2 layers of filo pastry)
  • Place about 2 tbsp. of the turkey mince mixture at one end of the strip, leaving a 2cm / 1-inch border. Fold a corner over, diagonally to the left, making an enclosed triangle. Fold again, moving all the way along until the end of the strip. Spray the outside. Place the samosa on the greased baking tray
  • Repeat the process with the other 7 sheets
  • Bake in the centre of the oven for about 20 minutes, turning the samosas over halfway through
  • Once sizzling and a golden brown colour, allow the samosas to cool a little
  • Delicious serve with a salad of iceberg lettuce, tomatoes and a little mango chutney

Notes

Nutrition Label shows per serving of one filo parcel. Suggested serving would be two per person. As the recipe makes 12 Samosas there is enough to serve 6 people.
These Samosas can be cooked and then frozen.
