Place red wine vinegar, olive oil and garlic into a jar with a lid and shake well.
Season to taste with salt and pepper.
Couscous Greek Salad :-
1) First cook your Couscous by placing it in a bowl and pour freshly boiled water over it, covering roughly 1cm / ½”. Stir and cover with a plate and set aside for 5 minutes. After 5 minutes, use a fork to fluff up the grains and set aside to cool.
2) Combine the cooled couscous, tomatoes, cucumber, red onion and olives in a large bowl.
3) Add the red wine vinegar dressing and combine with the salad.
4) Divide the couscous salad between two serving plates and crumble the feta cheese over and garnish with the chopped parsley.
