Ingredients

For the meatballs: -

  • 600 g Quorn Mince
  • 4 large eggs beaten
  • 1 tablespoon olive oil
  • 50 g wholemeal breadcrumbs
  • 1 small onion finely chopped
  • 1 clove garlic crushed
  • 1 teaspoon dried mixed herbs
  • Freshly grated salt and pepper
  • 3 tablespoon plain flour

For the tomato sauce: -

  • 1 tablespoon olive oil
  • 1 small onion finely chopped
  • 2 cloves garlic crushed
  • 1 can chopped tomatoes
  • 2 tablespoon fresh basil chopped
  • 1 tablespoon tomato puree
  • Freshly ground salt and pepper

Instructions

Making the meatballs: -

  • Pre-heat oven to 200C. Lightly coat a baking tray with cooking oil spray or rub some olive oil over the surface.
  • Place all of the meatball ingredients into a large mixing bowl, season and using your hands mix everything together. Then mix in flour which will help to bind the recipe. You may not need as much as the 3 tablespoons.
  • Using your hands form 12 balls out of the Quorn meatball mixture and place them onto the baking tray spaced slightly apart.
  • Bake for 20 to 25 minutes. Meanwhile make the tomato sauce.*

Making the tomato sauce: -

  • Gently heat the olive oil in a frying pan and sauté the onion. Once its starting to brown add the crushed garlic and stir everything together for a couple of minutes.
  • Add the can of chopped tomatoes and stir well. Bring the mixture to the boil.
  • Add the basil and tomato puree.
  • Season to taste and turn down to simmer for 5 minutes.
  • Check on your meatballs and once they are cooked through place them in the pan and combine them with the sauce.
  • Serve your Quorn meatballs and tomato sauce.

Notes

*You can buy a shop bought pasta sauce if you don’t want to / don’t have time to make the tomato sauce, but I seriously recommend you do!
