This oven baked lentil and carrot patties recipe is an excellent budget recipe. Delicious and easy to make these vegetarian lentil and carrot patties are sure to fill any hungry tums plus they freeze well too!

Ingredients

  • 1 tablespoon olive oil
  • 1 small onion finely chopped
  • 1 clove garlic crushed
  • 1 medium carrot grated
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • ¼ teaspoon mild chilli powder
  • 300 g green lentils soaked overnight
  • 100 g wholemeal breadcrumbs
  • 1 medium egg beaten
  • Salt and freshly ground pepper

Instructions

  • Preheat oven to 180C
  • Heat olive oil in a frying pan and saute the onion, garlic and carrot for 3 to 4 minutes until soft then stir in the spices.
  • Drain the green lentils and add them to a food processor with the onion mixture from the pan, the breadcrumbs and the egg. Blitz mixture until coarse enough to form patties.
  • Using your hands shape the mixture into 8 patties and place on a lightly greased baking tray.
  • Cook in the centre of an oven for 15 minutes.

Notes

The recipe makes 8 patties.
