📋 Easy Healthy Ramen Noodles

This easy healthy ramen noodles recipe is the ultimate comfort food. Made in just over 30 minutes it's perfect for busy weeknights!

Ingredients

  • 1 tablespoon olive oil
  • 100 g grated carrots
  • 230 g thinly sliced shiitake mushrooms
  • 2 cloves garlic crushed
  • 1 teaspoon fresh ginger grated
  • 1.5 L chicken or vegetable stock
  • 6 tablespoon light soy sauce
  • 150 g dried medium egg or dried ramen noodles
  • 180 g baby spinach chopped
  • 2 teaspoon sesame oil
  • 4 spring onions thinly sliced
  • Freshly ground salt and black pepper
  • 4 eggs soft boiled

Instructions

  • Gently heat the oil in a large casserole pot or saucepan.
  • Stir in the grated carrots and sliced mushrooms and sauté for 2-3 minutes until softened. Stir in the garlic and ginger and cook for 1 minute.
  • Add your chosen stock and soy sauce. Bring to the boil and turn down to simmer.
  • Stir in noodles and cook for 7-8 minutes until noodles softened.
  • Add baby spinach and sesame oil and cook for 2-3 minutes until spinach has wilted.
  • Divide the soup into two bowls and top soup bowls off with the sliced spring onions and halved soft-boiled eggs.
