📋 Easy Slow Cooker Moroccan Lamb

Easy slow cooker Moroccan lamb is a delicious dish packed with spices, tender lamb, sweet prunes, and hearty chickpeas. It requires minimal prep, great for busy days!

Ingredients

  • 600 g Lean Lamb cubed
  • 1 teaspoon ground cumin
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground ginger
  • 1 teaspoon ground coriander
  • 1 teaspoon paprika
  • 1 large onion sliced
  • 2 cloves garlic crushed
  • 2 x 400g tins of Chopped Tomatoes
  • 1 tablespoon honey
  • 2 medium sized carrots diced
  • 1 x 400g tin of Chickpeas rinsed and drained
  • 100 g dried prunes chopped in half
  • Salt and Freshly Ground Black Pepper
  • 1 tablespoon Freshly Chopped Coriander optional for garnish

Instructions

  • Toss the lamb in the ground cumin, ground cinnamon, ground ginger, ground coriander and paprika. Leave to the side for at least an hour. Or refrigerate overnight.
  • Then add the spice covered lamb and all the ingredients except the carrots, chickpeas and prunes into your slow cooker. Stir well.
  • Cook on low for 4-5 hours, or on high for 2-3 hours.
  • About an hour before the end of the cooking stir in the carrots, chickpeas and prunes. Season to taste.
  • Serve garnished with the chopped coriander.
