Easy slow cooker Moroccan lamb is a delicious dish packed with spices, tender lamb, sweet prunes, and hearty chickpeas. It requires minimal prep, great for busy days!
Toss the lamb in the ground cumin, ground cinnamon, ground ginger, ground coriander and paprika. Leave to the side for at least an hour. Or refrigerate overnight.
Then add the spice covered lamb and all the ingredients except the carrots, chickpeas and prunes into your slow cooker. Stir well.
Cook on low for 4-5 hours, or on high for 2-3 hours.
About an hour before the end of the cooking stir in the carrots, chickpeas and prunes. Season to taste.
