📋 Quick Tuna Quinoa Salad
Quick tuna quinoa salad made with canned tuna, fluffy quinoa and a light lemon dressing. Healthy and easy lunch recipe.

For The Salad:-
- 185 g quinoa rinsed
- 2 x 145g cans tuna chunks in spring water drained
- ½ small red onion finely diced
- 120 g cucumber diced
- 2 tablespoon chopped fresh parsley
For The Tuna Quinoa Salad Dressing:-
- 2 tablespoon extra virgin olive oil
- Juice of 1 lemon
- 1 teaspoon Dijon mustard
- Salt and freshly ground black pepper
Cook the quinoa in 460ml boiled water for approximately 20 minutes. Add more boiled water if required. Drain, and leave to cool completely.
Place the cooled quinoa into a large mixing bowl.
Add the drained tuna, red onion, cucumber and chopped parsley.
In a small bowl or jug, whisk together the olive oil, lemon juice, Dijon mustard, salt and pepper until combined.
Pour the tuna quinoa salad dressing over the salad ingredients and gently toss until everything is evenly coated. Season to taste.
Serve immediately or place in the fridge for about 30 minutes before serving.
