- 300 g dried tagliatelle
- 1 tablespoon olive oil
- 1 small onion diced.
- 2 cloves garlic crushed.
- 150 ml low fat crème fraiche
- 1 tablespoon lemon juice
- 45 g parmesan cheese grated.
- 240 g smoked salmon sliced into strips.
- 2 tablespoon flatleaf parsley chopped.
- Freshly Ground Salt and Black Pepper
Cook the dried tagliatelle according to package instructions in salted boiling water until al dente, drain and set aside.
Whilst the pasta is cooking gently heat the oil in a large skillet or non-stick frying pan over a medium heat and sauté the onion and garlic for about 2 – 3 minutes until softened but not burnt.
Stir in the crème fraiche and lemon juice and when it starts to bubble add the parmesan, stir well and turn down to simmer.
Stir in the salmon strips and allow to simmer for 1 - 2 minutes, until warmed through.
Remove from the heat stir, in parsley and season to taste.
Combine the drained pasta with the salmon and sauce. Serve.
