Add the carrot and continue to cook everything for a further 2 minutes.
Stir in the paprika, tomato puree, tomatoes and stock and bring to the boil.
Add the potatoes, mix well, and turn down to simmer on a low heat for about 10 minutes until just beginning to soften. Stir occasionally to prevent sticking to the bottom.
Stir in the butter beans and cook for another 10 minutes.
