🔪 Step By Step Instructions
Detailed instructions are in the recipe card below. But here is a quick step by step guide of how to make this easy butter bean stew recipe:
Step 1
- Heat the oil in a large casserole pot. Sauté garlic and onion.
Step 2
- Add the carrot and continue to cook.
Step 3
- Stir in the paprika, tomato puree, tomatoes and stock and bring to the boil.
Step 4
- Add the potatoes and simmer on a low heat until soft, stirring occasionally to prevent sticking to the bottom.
Step 5
- Stir in the butter beans and cook until softened.
Step 6
- Season to taste and serve.
📖 Substitutions
- Olive Oil - just use cooking olive oil. No need to use expensive extra virgin olive oil here.
- Fresh Garlic Cloves - I recommend only using fresh garlic cloves here which are best for flavour rather than garlic granules.
- Onion - I use a brown onion but you could also use a red onion.
- Carrot - you could use bell peppers instead of a carrot.
- Paprika - you can also use smoked paprika. This spice adds more colour and flavour to the recipe.
- Tomato Paste - you could use tomato sauce or tomato puree instead.
- Tinned Chopped Tomatoes - you could use tomato passata instead.
- Vegetable Stock - use a good quality vegetable stock.
- White Potatoes - I just use ordinary white potatoes but you could also use baby potatoes or even sweet potatoes.
- Tinned Butter Beans - use butter beans from a can which only require draining, rinsing and cooking. If using dried butter beans make sure you have soaked and cooked them first before adding to this recipe.
- Freshly Ground Salt and Black Pepper

Equipment
Ingredients
- 2 tablespoon olive oil
- 2 cloves of garlic crushed.
- 1 large onion sliced.
- 1 large carrot diced.
- 1 tablespoon paprika
- 1 tablespoon tomato paste
- 400 g tinned chopped tomatoes.
- 250 ml vegetable stock
- 500 g white potatoes peeled and cut into small pieces.
- 2 x 400g tinned butter beans drained and rinsed.
- Freshly Ground Salt and Black Pepper
Instructions
- Gently heat the olive oil in a large casserole pot and sauté the garlic and onion for about 2-3 minutes until softened.
- Add the carrot and continue to cook everything for a further 2 minutes.
- Stir in the paprika, tomato puree, tomatoes and stock and bring to the boil.
- Add the potatoes, mix well, and turn down to simmer on a low heat for about 10 minutes until just beginning to soften. Stir occasionally to prevent sticking to the bottom.
- Stir in the butter beans and cook for another 10 minutes.
- Season to taste and serve.
