    Easy butter bean stew is a delicious all in one pot vegan vegetable stew that's perfect as a family meal or to serve a crowd.

    If you're looking for a hearty and delicious meal then this easy butter bean stew is the perfect comfort food!

    This vegetable stew is a beautiful one-pot complete family meal.

    Packed with protein from the butter beans, this tomato-based stew is both healthy and delicious.

    It's rich and full of Mediterranean flavours and smells amazing whilst cooking. It's perfect for any time of the year!

    Stews like my quick healthy chicken stew and chicken stew with tomatoes and potatoes feature regularly in our house.

    This stew though, is a vegan one. It's great if you're looking to cut down on your meat intake.

    So this recipe is definitely one to add to your list of tasty stews as well!

    You'll have everything prepared to make this butter bean stew in just 20 minutes.

    After that just follow the instructions adding the different ingredients at different times to cook.

    Whilst the vegetables are cooking you can get on with other things you need to do which is why this recipe is such a great recipe for busy weeknights.

    We love to have this stew with some slices of wholemeal bread. That means we have something to scoop up all the deliciousness with and there's always clean bowls!

    This is a great budget recipe too. It uses tinned chopped tomatoes, white potatoes, tinned butter beans and basic kitchen cupboard staples.

    • Fresh Garlic Cloves
    • Onion
    • Carrot

    • White Potatoes
    • Tinned Butter Beans

    🔪 Step By Step Instructions

    Detailed instructions are in the recipe card below. But here is a quick step by step guide of how to make this easy butter bean stew recipe:

    Garlic and onion sautéd in a large casserole pot.

    Step 1

    • Heat the oil in a large casserole pot. Sauté garlic and onion.
    Carrot added to the sautéd garlic and onion.

    Step 2

    • Add the carrot and continue to cook.
    Paprika, tomato puree, tomatoes and stock added to the casserole pot.

    Step 3

    • Stir in the paprika, tomato puree, tomatoes and stock and bring to the boil.
    Potatoes added to the casserole pot.

    Step 4

    • Add the potatoes and simmer on a low heat until soft, stirring occasionally to prevent sticking to the bottom.
    Butter beans stirred into the rest of the ingredients in a large casserole pot.

    Step 5

    • Stir in the butter beans and cook until softened.
    Butter bean stew in a large casserole pot seasoned to taste and ready to serve.

    Step 6

    • Season to taste and serve.

    📖 Substitutions

    • Olive Oil - just use cooking olive oil. No need to use expensive extra virgin olive oil here.
    • Fresh Garlic Cloves - I recommend only using fresh garlic cloves here which are best for flavour rather than garlic granules.
    • Onion - I use a brown onion but you could also use a red onion.
    • Carrot - you could use bell peppers instead of a carrot.
    • Paprika - you can also use smoked paprika. This spice adds more colour and flavour to the recipe.
    • Tomato Paste - you could use tomato sauce or tomato puree instead.
    • Tinned Chopped Tomatoes - you could use tomato passata instead.
    • Vegetable Stock - use a good quality vegetable stock.
    • White Potatoes - I just use ordinary white potatoes but you could also use baby potatoes or even sweet potatoes.
    • Tinned Butter Beans - use butter beans from a can which only require draining, rinsing and cooking. If using dried butter beans make sure you have soaked and cooked them first before adding to this recipe.
    • Freshly Ground Salt and Black Pepper

    Ingredients

    • 2 tablespoon olive oil
    • 2 cloves of garlic crushed.
    • 1 large onion sliced.
    • 1 large carrot diced.
    • 1 tablespoon paprika
    • 1 tablespoon tomato paste
    • 400 g tinned chopped tomatoes.
    • 250 ml vegetable stock
    • 500 g white potatoes peeled and cut into small pieces.
    • 2 x 400g tinned butter beans drained and rinsed.
    • Freshly Ground Salt and Black Pepper
    Metric - US Customary

    Instructions

    • Gently heat the olive oil in a large casserole pot and sauté the garlic and onion for about 2-3 minutes until softened.
    • Add the carrot and continue to cook everything for a further 2 minutes.
    • Stir in the paprika, tomato puree, tomatoes and stock and bring to the boil.
    • Add the potatoes, mix well, and turn down to simmer on a low heat for about 10 minutes until just beginning to soften. Stir occasionally to prevent sticking to the bottom.
    • Stir in the butter beans and cook for another 10 minutes.
    • Season to taste and serve.
