Pea and Mint Soup
Pea and mint soup is cheap to make as it’s made from frozen peas. This is a great lunchtime staple it’s really easy to make and its delicious and creamy!
- Low calorie cooking spray
- 1 large onion , diced
- 650 g frozen peas
- 20 g mint leaves , stalks removed
- 1 L vegetable stock
- Salt and freshly ground pepper for seasoning
Spray the bottom of a saucepan with the low calorie spray 5 times. Turn the heat on high underneath, then when the spray begins to bubble turn the heat down to medium.
Add the onion to the pan and sauté for about 5 minutes until soft. Stirring constantly and adding drops of hot water if the onions begin to stick to the pan.
Add the frozen peas, mint leaves and vegetable stock.
Bring the soup to the boil and then turn down the heat to allow the soup to simmer for approximately 20 minutes until the peas are fully cooked.
Blitz the soup in a blender / food processor until pureed.
Return to the pan and then season to taste.
