- 2 x 326g cans sweetcorn drained
- 4 spring onions chopped.
- 2 tomatoes de-seeded and finely chopped.
- 3 tablespoon fresh coriander chopped.
- 2 green chillies finely diced.
- 1-2 limes freshly squeezed for juice.
- Salt and Freshly Ground Black Pepper
Place all the ingredients into a large mixing bowl and mix well.
Season to taste and let marinate in the fridge for at least 20 minutes before serving.
Stir well before serving.
