    This quick corn salsa is a delicious and easy to make time saving recipe that goes great with fajitas, tacos, and burrito bowls!

    This easy to prepare tangy corn salsa is just bursting with sweet zesty flavours.

    I recently made this dish to take to a family get-together where my sister-in-law had made delicious chicken fajitas and mince tacos.

    With little time after work to put something together I did follow another salsa recipe but ended up making my own as that recipe's quantities and timing were not to my liking!

    My twist on the traditional salsa is fresh, vibrant, and ready in minutes.

    Just follow the instructions below and learn how to make corn salsa in hardly any time at all!

    This quick corn salsa recipe uses just a handful of ingredients.

    So you can easily say goodbye to store-bought salsas.

    Making this, not only do you save yourself money, but you know exactly what ingredients are in it too.

    You'll get a big bowl of salsa with this recipe. One that should easily serve up to 8 people.

    Even if you're not entertaining or sharing this salsa it can be stored in the fridge and makes a great packed lunch or a compliment to just about any dish.

    It makes a great dip for dipping tortilla chips into.

    This is a great healthy snack to have if I'm craving something between meals but don't want to ruin my appetite!

    Detailed instructions are in the recipe card below. But here is a quick step by step guide of how to make corn salsa:

    • Put all the corn salad ingredients including the freshly squeezed lime juice into a bowl.

    Step 2

    • Season to taste with salt and pepper. Marinate in the fridge for at least 20 minutes before serving.

    Step 3

    • Stir well and serve.

    📖 Substitutions

    • Canned Sweetcorn - you can easily substitute with frozen sweet corn defrosted as per instructions. You can also use fresh corn.
    • Spring Onions (Scallions) - you can substitute with red onion instead.
    • Tomatoes - use any kind of tomatoes you like. I just used ordinary salad tomatoes.
    • Coriander (Cilantro)
    • Green Chillies - you can use a jalapeno instead or leave the chillies out if you don't want any spice.
    • Fresh Limes - only use fresh limes for fresh lime juice. You could use a little lemon juice from a freshly squeezed lemon too.
    • Salt and Freshly Ground Black Pepper

    • 4 spring onions chopped.

      this sounds fresh and tasty Neil. I like to use frozen corn actually as it has a fairly good texture. Yum love fresh lime juice!

      We eat tacos quite often around here, and this corn salsa would be fantastic with (or in) tacos! I bet this would be fantastic with fresh corn although we're nearing the end of fresh corn season here in North Carolina. Either way, great recipe my friend!
