With little time after work to put something together I did follow another salsa recipe but ended up making my own as that recipe's quantities and timing were not to my liking!

Step 1
- Put all the corn salad ingredients including the freshly squeezed lime juice into a bowl.
Step 2
- Season to taste with salt and pepper. Marinate in the fridge for at least 20 minutes before serving.
Step 3
- Stir well and serve.
📖 Substitutions
- Canned Sweetcorn - you can easily substitute with frozen sweet corn defrosted as per instructions. You can also use fresh corn.
- Spring Onions (Scallions) - you can substitute with red onion instead.
- Tomatoes - use any kind of tomatoes you like. I just used ordinary salad tomatoes.
- Coriander (Cilantro)
- Green Chillies - you can use a jalapeno instead or leave the chillies out if you don't want any spice.
- Fresh Limes - only use fresh limes for fresh lime juice. You could use a little lemon juice from a freshly squeezed lemon too.
- Salt and Freshly Ground Black Pepper
