Ingredients

Halloumi Salad Ingredients

  • 100 g reduced fat Halloumi sliced
  • 4 cooked beetroots sliced
  • 10 cherry tomatoes cut in half
  • Lettuce of choice (I used a small 70g bag of herbed lettuce)
  • 2 tbsp lightly toasted pine nuts
  • 1 small finely sliced red onion

Dressing Ingredients

  • 1 tbsp balsamic vinegar
  • ¼ tsp freshly squeezed lemon juice
  • ¼ tsp extra virgin olive oil
  • Grind of salt

Instructions

  1. Assemble the beetroot and cherry tomatoes on top of the salad leaves, sprinkling the pine nuts and finely chopped onion over.
  2. Mix all the dressing ingredients together in a small jar.
  3. Heat griddled pan until medium hot then brown each side of the halloumi cheese slices.
  4. Place the halloumi slices on top of the salad and drizzle the dressing over.
