Got a tin of chickpeas you don't know what to do with? Left over butternut squash? Then how about chickpea and butternut squash casserole?
That's right Folks. There's a chickpea and butternut squash casserole recipe post from me today, Friday!
But not here, no.
Today, I'm delighted to have been asked to do a guest post for October Unprocessed by Andrew Wilder of Eating Rules.
And I've shared my delicious chickpea and butternut squash casserole there.
October Unprocessed all started in 2009 when Andrew asked "what would it be like to go for one whole month without eating any processed foods"?
A few friends joined in then, taking the challenge along with Andrew, where the experience was said to be "revelatory"!
Since then Andrew's quest to get people to eat unprocessed foods for a whole month has steadily grown where now 30,000 people take part!
So head on over there today to get your delicious copy of my healthy vegetarian gluten free recipe,

So love this challenge! And, Neil, I headed over to Eating Rules and gosh darn it - your casserole looks amazing! I am thinking that NEEDS to make an appearance on my Christmas dinner table!

You'd love it Shashi.
It's been really popular and someone even made a video of themselves making it on Instagram too, but with their own cashew sauce as they couldn't get creme fraiche. I thought that was a brilliant substitute! 🙂
