Easy homemade Quorn lasagne is delicious. This vegetarian Quorn mince recipe serves up to six people. Making it a great meat free meal for entertaining.
Folks, if I'm entertaining guests for dinner then one of my favourite go-to dishes to prepare and serve is this easy homemade quorn lasagne.
Ready in just over one hour this healthy vegetarian lasagne recipe is also low in calories. Each tasty slice is only 295 calories.
If you're not entertaining then this a great recipe for feeding your family. If you have any leftovers they can be easily frozen too.
I adapted my original beef mince low-cost healthy lasagne to make this vegetarian recipe.
I've been making that lasagne recipe for about 25 years and it’s never failed to please.
So you can be sure that this one is no different in taste, quality or simplicity to make either!
Those of you who are regular readers and followers (thank you!) know that I use Quorn in a lot of my recipes.
I'm not an affiliate of Quorn. Although I should say that they did once send me some vouchers for their other Quorn products.

What I'll just say about Quorn is that it's not only a fantastic healthy vegetarian alternative to meat. But it’s also really versatile. Hence me using it in many of my recipes!
My other half and I particularly like to use Quorn as a substitute for where we would previously have eaten red meat.
That has helped us to reduce to a minimum the amount of red meat that we eat in our diets.
We try to eat as close as possible to a Mediterranean diet. That diet is rich in vegetables and fruits. And includes a low intake of meat.
The Health Benefits of this Quorn Lasagne
- Quorn is made from Mycoprotein which is an excellent source of protein and essential amino acids.
- It's good for our digestive systems as it's high in dietary fibre.
- Quorn is low in salt, fat and saturated fats.
- There is no cholesterol in Quorn.
Just to emphasise that last point more. Red meats such as beef, pork and lamb have higher levels of cholesterol.
A high level of cholesterol in our diets can be a contributing factor towards heart disease. So it's good to cut down on products containing lots of cholesterol.
But, you don't have to give up your favourite meals.
Just use healthier alternatives. As I've done by using Quorn in place of beef in this Quorn lasagne!

Easy Homemade Quorn Lasagne Recipe

Ingredients
For the cheese sauce :-
- 20 g corn flour mixed with 2 tbsp. cold water
- 300 ml skimmed milk
- 40 g low fat grated cheddar cheese
For the Bolognese :-
- 1 tablespoon olive oil
- 1 large onion peeled and diced
- 2 cloves garlic crushed
- 200 g button mushrooms sliced
- 300 g Quorn Mince
- 1 tablespoon corn flour
- 2 tablespoon tomato puree
- ½ teaspoon salt
- ½ teaspoon freshly ground pepper
- 2 tablespoon freshly chopped basil
- 400 g tin chopped peeled tomatoes
- 150 ml water
For the Lasagne :-
- 7 dried sheets of whole wheat lasagne
- 80 g low fat grated cheddar cheese
Instructions
- Pre-heat oven to 180C Fan
First make the cheese sauce: -
- Put the skimmed milk in a saucepan and add the corn flour water mixture.
- Turn on the heat low and whisk using a balloon whisk until beginning to thicken to create a white sauce.
- Gradually add the grated cheese, continually whisking to make it a creamy cheese sauce.
- Place to the side.
Second make the Bolognese sauce :-
- Gently heat the oil in a pan and sauté the onion and garlic for 4 to 5 minutes until softened.
- Add the sliced mushrooms and sauté together for 2 to 3 minutes.
- Add the Quorn mince, then stir in the corn flour, tomato puree, salt, pepper, chopped basil, tomatoes and the water.
- Stir the mixture thoroughly then bring the pan to the boil and turn down the heat to a gentle simmer for 8 – 10 minutes.
- Pour half of this Bolognese sauce into a shallow ovenproof dish and then top with half of the lasagne sheets. Repeat this process with the other half of sauce and lasagne sheets.
- Re-heat and whisk the cheese sauce just so it has a pouring consistency if it has been allowed to cool then pour it over the top of the lasagne layers and sprinkle it with the grated cheese.
- Bake in the oven for 20 – 25 minutes until the cheese is brown and bubbly.
- Allow to cool before serving and then serve with a green salad and garlic bread

Oh, I love a good lasagna! It's hard to beat a dish like this when it comes to these early Autumn days when it's just a little bit chilly outside. Plus, the smell of lasagna in the oven is just excellent when you walk in the back door! As I've mentioned before, Quorn is not as popular here in the States, but I'd love to make this with lean ground beef (like ground sirloin). Lean beef was mentioned recently in a new study on the Mediterranean Diet, too. Either way, I'm on board with this one! Sounds delicious, Neil! Hope you and Lady Lynne are recovering from your epic adventure!

This recipe would definitely work really well with your lean beef David. If you can't get Quorn and don't mind this recipe not being vegetarian then absolutely, the lean beef would be perfect. I thought now would be a good time to start hearty warming Autumn / Fall recipes. It's a little chilly outside here today. Plus we had a huge storm yesteray and there's quite a lot of tree debris everywhere. So I'm reminded of the days that are heading our way. I've receoved from the epic holiday David. Just not the amount of washing yet. ๐

Quorn is quite popular over here. I had a Quorn taco just the other day and didnโt know it was made with Quorn until they told me. I've never used a cheddar cheese sauce for my lasagna, but it sounds very good. We'll just have to give that a try.

Yes, I've seen your recipes with Quorn before. But like in the US, I don't think this product is popular in Canada. At least I haven't seen it (Well, I haven't really tried searching). And although we don't follow a meatless diet, it's always good to have alternative ways to cook a traditional recipe. Indeed, thanks to your post, I'm craving a lasagna now. What about ground chicken/turkey?

It's a shame that Quorn isn't available / popular in Canada Ben, but yes, definitely you can use ground chicken or turkey. Both are superb healthy alternatives to red meat and I use them frequently in my cooking! Hope all is well with you there. ๐

Honestly, this is the most delicious recipe. Quorn items tend to lack "flavour" but your measurements and recommendations were spot on! I love the addition of the mushrooms, it gave the lasagne a hearty feel which is needed if you substitute meat... My partner did not even know it was Quorn! Thanks so much!
