We love baked potatoes and always turn to them when looking for a quick healthy lunch or dinner option.
The great thing about baked potato recipes like this and my baked sweet potato with feta and orange is that they are minimal effort to make.
These tuna stuffed baked potatoes only take 5 minutes to prepare and the rest of the time the potatoes are baking allowing you to get on with other things.
This cheese and tuna stuffed baked potato is different from the classic recipe in that I add a little thyme and paprika to the filling.
We find the addition of these herb and spice options make all the difference to what otherwise would just be a plain old baked tuna and cheese potato!
Of course feel free to miss these out if you want to but we do not recommend skipping them.
As with the majority of my recipes this one is easy to adapt to your own personal taste!
The recipe makes enough filling for 2 baked sweet potatoes but can easily be doubled up to feed a family of 4.

Step By Step Instructions
Detailed instructions are in the recipe card below. But here is a quick step by step guide of how to make these healthy baked potatoes with tuna and cheese:
Step 1 & 2
- Preheat oven to 200C Fan.
- Pierce the potatoes with a fork. Rub with a little olive oil and salt. Place on a foil lined baking tray.
Step 3 & 4
- Bake potatoes until soft. Cooking times may vary depending on the size of the potatoes and your oven. Check the sweet potatoes are cooked by piercing a sweet potato through the centre with a sharp knife to check and it should go through easily.
- Whilst potatoes are baking mix together the tuna, mayonnaise, celery, thyme, garlic and paprika. Season to taste. Place tuna mixture into the fridge until potatoes are baked.
Step 5
- Once baked, split open the top down the length of the potato. Squeeze the ends together to open the potato up a little. Sprinkle ยฝ of the cheese into each potato. Then spoon ยฝ of the tuna mixture into each potato. Sprinkle the remaining cheese on top.
Step 6
- Put the filled potatoes back into the oven, and bake for about 5 more minutes until the cheese is melted.
Step 7
- Serve hot with a green salad.
Substitutions
- Sweet Potatoes - you could use ordinary potatoes for this, just adjust the cooking time accordingly.
- Olive Oil - I prefer olive oil but you could use vegetable oil.
- Salt And Freshly Ground Black Pepper
- Can Of Tuna In Spring Water - I use tuna in springwater so there's less salt.
- Low Fat Mayonnaise - full fat can be used but will alter the nutritional label.
- Celery Stalk - you can leave this out or use diced onion or spring onions instead.
- Dried Thyme - you can leave this out or use dried oregano instead.
- Clove Garlic - you can leave this out if you want.
- Smoked Paprika - you can use ordinary paprika but you'll loose the delicious smoky flavour.
- Reduced Fat Mature Cheddar Cheese - full fat or another cheese can be used but will alter the nutritional label.

- 2 medium sweet potatoes skin left on but scrubbed lightly

- 145 g can of tuna in spring water drained.
- 1 tablespoon low fat mayonnaise
- 1 stalk of celery finely diced
- ยผ teaspoon dried thyme
- Clove Garlic crushed
- ยผ teaspoon smoked paprika
- 80 g reduced fat mature cheddar grated
Instructions
- Preheat oven to 200C Fan.
- Prick the sweet potatoes all over with a fork a few times. Rub with a little olive oil and salt and place on a foil lined baking tray.
- Bake until soft, about 50 – 60 minutes, depending on potato size.
- Meanwhile, in a small Pyrex bowl mix together the tuna, mayonnaise, celery, thyme, garlic and paprika. Season to taste. Put the fridge until potatoes are baked.
- Once the potatoes are baked, split open the top down the length of the potato. Squeeze the ends together to open the potato up a little. Sprinkle ยฝ of the cheese into each potato. Then spoon ยฝ of the tuna mixture into each potato. Sprinkle the remaining cheese on top.
