This healthy chicken potato bake is a simple chicken and potato gratin recipe which is a great meal for family or entertaining friends.
It's a delicious, healthy dish to make and any leftovers can be frozen for future meals too.
The recipe is largely based on my popular salmon and spinach potato bake, but this time, I'm using chicken thighs instead of the salmon and peas as the vegetable.
You'll find this chicken potato recipe perfect for cooler days. It's satisfying, filling, and a complete meal in one dish.
Unlike other such recipes you might find on the internet, here I'm not using any cream in this dish, so it's a chicken potato bake with no cream.
It's healthier but still incredibly satisfying and it still has the taste of a creamy chicken potato bake!
Instead of cream, I've made my light but creamy sauce using skimmed milk and the juices of the cooking chicken thighs.
Using chicken thighs gives the dish it's rich flavour as well as being lovely and tender to eat.
The combination of these ingredients as well as the onion and garlic ensure this simple potato bake is still both healthy and delicious.
If you lightly spray the sliced potatoes with low fat cooking spray prior to cooking, it gives this chicken potato bake a perfect crispy browned topping.

Why You Should Make This Healthy Chicken Potato Bake

Ingredients
- Cornflour - used to thicken the sauce. Ordinary flour is OK but may produce lumps.
- Freshly Ground Salt and Black Pepper
- Boneless Skinless Chicken Thigh Fillets
- Waxy Potatoes
- Olive Oil - cooking olive oil is fine. No need for extra-virgin olive oil.
- Onion
- Garlic Cloves - use only fresh.
- Skimmed Milk - whole milk is fine but then this won't be a healthy recipe and you probably won't need to use the cornflour to thicken the sauce.
- Frozen Peas
- Low Calorie Cooking Oil Spray

Step By Step Instructions
Detailed instructions are in the recipe card below. But here is a quick step by step guide of how to make this healthy chicken potato bake:
Steps 1 & 2
- Pre-heat oven to 180c Fan.
- Season the cornflour in a bowl.
Step 3
- Dip each piece of chicken into the seasoned flour and set aside.
Step 4
- Cook the potato slices. then drain them in a colander or sieve.
Step 5
- Gently heat the olive oil in a large frying pan. Sauté the onion until soft.
Step 6
- Add the garlic and seasoned chicken to the pan. Cook until chicken browned slightly.
Step 7
- Add the skimmed milk. Continue cooking until it thickens. Season to taste.
Step 8
- Pour the contents of the pan into a casserole dish. Stir in the frozen peas and distribute evenly.
Step 9
- Top the chicken mixture with the potato slices. Spray the top of the potatoes evenly using the cooking oil spray.
Step 10
- Bake in the centre of an oven until the potatoes are brown and crispy. Turn on the grill at the end of cooking to make your potatoes extra crispy.

Can I Use Chicken Breasts Instead Of Chicken Thighs?
You can use chopped chicken breasts instead of chicken thighs. However you may need to add some chicken stock to the sauce because chicken thighs are more succulent and their juices help to make the sauce. Plus chicken breasts might be drier and less juicy.
Can I Use Leftover Cooked Chicken?
Certainly. Any kind of leftover cooked chicken could be added in at step 6. (above). You wouldn't need to brown the chicken.
What Kind Of Potatoes Can I Use?
You want to use a waxy potato that doesn't fall apart on cooking. So definitely not a floury type of potato. I use Jersey Royal but you could also use Maris Peer or Charlotte.
What Other Vegetables Can I Use Instead of Peas?
This is a versatile recipe so you can easily swap vegetables to suit your preferences. For example you could use carrots, sweetcorn or green beans instead.

- 2 tablespoon cornflour
- Freshly ground salt and black pepper
- 650 g boneless skinless chicken thigh fillets cut into equal sized pieces
- 500 g waxy potatoes peeled and sliced thinly*
- 1 tablespoon olive oil
- 1 large onion peeled and chopped
- 2 cloves of garlic crushed
- 200 ml skimmed milk
- 80 g frozen peas
- Low calorie cooking oil spray
Instructions
- Pre-heat oven to 180c Fan.
- Place the cornflour in a bowl and season with some salt and pepper.
- Dip each piece of chicken into the seasoned flour and set aside.
- Cook the potato slices in boiling salted water for about 5 minutes, then drain them in a colander or sieve and place to the side to cool. While the potatoes are cooking, follow the rest of the instructions below.
- Heat the olive oil in a large frying pan and gently sauté the onion for about 5 minutes until soft.
- Add the garlic and seasoned chicken to the pan and cook until browned slightly.
- Pour over the skimmed milk. Continue cooking until it thickens for about 2 minutes then season to taste.
- Pour the contents of the pan into a casserole dish add the frozen peas and distribute evenly.
- Top the chicken mixture with the potato slices and spray the top of the potatoes evenly using the cooking spray.
- Bake in the centre of the oven for about 40 minutes until the potatoes are brown and crispy. I like to grill my potatoes for 5 minutes or so at the very end to get them crispier.
