    Baked chicken and mixed vegetables is an easy and delicious tray bake. Minimum effort is required to make this perfect family dinner or optional side dish!

    Folks, this baked chicken and mixed vegetables recipe is definitely one for your current to-make list!

    Not only is it delicious and easy to put together and serve, but it's minimum effort.

    With things being particularly challenging at the moment the one thing that I think you'll agree with me is that we don't need any more hassle. Especially in the kitchen!

    If you're currently working from home or home schooling you probably just want something you can quickly prep and shove in the oven until ready.

    Am I right? Then read on.....

    All that's required for this tasty baked chicken and vegetables recipe is a bit of chopping up and mixing together of the ingredients.

    That should only take you 20 minutes or so then you just bake all of the ingredients together in a suitable sized baking dish or baking tray.

    You can then sit back and relax or get on with other things whilst the magic is happening in the oven.

    The chicken comes out juicy and tender and it's complimented with a tasty selection of vegetables and a light seasoning of mixed herbs.

    This is one of those great recipes you don't need to put much thought to!

    It comes in at just 300 calories per serving for a main course which means you can easily pair it with a little pasta like I have to "bulk" it up.

    Or perhaps serve it with a little whole grain rice if you wanted to keep it gluten free.

    There's a good helping of protein in this dish and as I said in the introduction you can easily use it as a side dish if you wanted to as well.

    Baked Chicken and Mixed Vegetables Recipe

    Equipment

    • Stoneware serving dish
    • Kitchen scale
    • Chopping board
    • Kitchen knives
    • Garlic press
    • Measuring spoons
    • Large mixing bowl

    Ingredients

    • 700 g chicken breasts cut into bite size pieces.
    • 200 g button mushrooms sliced.
    • ½ brown onion diced.
    • ½ red onion diced.
    • ½ green pepper diced.
    • ½ red pepper diced.
    • 10 cherry tomatoes halved.
    • 2 cloves garlic crushed.
    • 1 teaspoon mixed herbs
    • 1 teaspoon salt
    • A few grinds of black pepper
    • 2 tablespoon olive oil
    Metric - US Customary

    Instructions

    • Preheat oven to 200C Fan.
    • Lightly spray a 26cm x 17cm stoneware baking dish or baking tray with cooking spray.
    • In a large bowl, using your hands, gently mix all the ingredients together, coating well in the oil.
    • Pour all the ingredients into the baking dish.
    • Cover the baking dish with aluminium foil and bake in the oven for 50 minutes. Stir halfway through. Then remove the foil and allow to bake for another 20 minutes.
    • Serve with some wholegrain rice, giant couscous, or penne pasta.

      This looks delicious, Neil! We've been doing our usual count-the-calories-January (which often goes into February and March) here, and I love the idea of making a yummy meal at just 300 calories. I need to put this on the menu here ASAP!

      i made a baked chicken and veg dish too for my blog post last week. always so handy, and easy! nothing better than shoving it into the oven and walking away for a while, then ... eat. 🙂

      Delicious! I think children would even love this chicken and vegetable dish! If I served it with pasta, I'd have to add a little cream and Parm... but that's just me! And, of course, it's less healthy that way.
