    Oven Baked Lentil and Carrot Patties

    This oven baked lentil and carrot patties recipe is an excellent budget recipe. Delicious and easy to make these vegetarian lentil and carrot patties are sure to fill any hungry tums plus they freeze well too!

    Today folks I must first pay credit to the inspiration for my oven baked lentil and carrot patties recipe coming from a recipe I picked up some time ago from my local Asda Supermarket. That recipe is here.

    The recipe was in one of their brochures that I picked up at the till and I took it home and tweaked it slightly to my own variation which I'm publishing here today.

    In my version though, the patties are oven baked rather than fried, making them healthier.

    I also serve mine on a bed of wilted spinach with corn on the cob to provide an altogether delicious quick healthy meal!

    Picking up free brochures and recipe cards when I'm out and about has been something I've always done.

    It's yet another place I get inspiration from for my recipes, plus it doesn't cost anything.

    I've got a whole folder full of recipes which I've done, or tweaked to make them my own.

    I always find it fun to change ingredients or combinations of spices to see what comes out and mostly with the intention of making the recipe as healthy as I can.

    I think it's definitely something I've inherited from my mum as she has books of recipes pasted from magazines and brochures too. It's funny the habits we pick up from our elders isn't it?

    I particularly love using green lentils in my recipes

    This lentil and carrot patties recipe was placed pretty high up on my "to-do" recipe trial list.

    I like using all types of lentils when I cook but green lentils in particular are said to be particularly heart healthy.

    Oven Baked Lentil and Carrot Patties Recipe

    If you want your lentil and carrot patties to be more spicy than than they are in this recipe then just add some more chilli powder. I made them suitable for children by being only mildly spiced.

    Generally I'll add more chilli powder than I've quoted in the recipe because my other half and I like our food quite spicy.

    Equipment

    • Non stick frying pan
    • Baking tray
    • Kitchen scale
    • Chopping board
    • Kitchen knives
    • Garlic press
    • Grater
    • Measuring spoons
    • Wooden spoon
    • Whisk
    • Food processor

    Ingredients

    • 1 tablespoon olive oil
    • 1 small onion finely chopped
    • 1 clove garlic crushed
    • 1 medium carrot grated
    • 1 teaspoon ground cumin
    • 1 teaspoon ground coriander
    • ¼ teaspoon mild chilli powder
    • 300 g green lentils soaked overnight
    • 100 g wholemeal breadcrumbs
    • 1 medium egg beaten
    • Salt and freshly ground pepper
    Metric - US Customary

    Instructions

    • Preheat oven to 180C
    • Heat olive oil in a frying pan and saute the onion, garlic and carrot for 3 to 4 minutes until soft then stir in the spices.
    • Drain the green lentils and add them to a food processor with the onion mixture from the pan, the breadcrumbs and the egg. Blitz mixture until coarse enough to form patties.
    • Using your hands shape the mixture into 8 patties and place on a lightly greased baking tray.
    • Cook in the centre of an oven for 15 minutes.
    Prevent your screen from going dark

        No, the green lentils are soaked overnight to soften them and then they are baked in the oven to cook them, as the recipe advises. 🙂

      You are the king of patties, Neil! You have so many awesome variations on baked patties...and all so healthy. I could see these being delicious over a chopped salad, too. I hear ya on the recipes from all sorts of places. I have the same thing! I keep a tray on my desk of magazine cuttings and print outs and even just pictures that I find the supermarket sales ad. It's all inspiration if I need to mix things up a bit! These patties sound delicious! Well done, and I hope you have an amazing weekend ahead!

        It's good to know that I'm not the only one with recipe cuttings and magazine pages collected up. I often think I'm mad and why do I need ALL of those cuttings. But as you say it's all inspiration if we need to mix things up a bit. Good stuff. Hope you have a good weekend too! 😀

        Tasty, filling, healthy and of course vegetarian. And this recipe can of course be vegan should the breadcrumbs be vegan. I forgot to mention that in the recipe.

      YUM! This recipe sounds amazing as either a stand-alone meal, side dish, or made into a burger patty of its own! I have trouble making patties (they always fall apart when I pan sear them) so I've bookmarked your website bc you seem like an expert patty maker! I can't wait to try a recipe 🙂

        These are great as burgers Christina. I thought about calling them burgers but they would fall apart too easily if made on a BBQ, I think. But yeah, Lynne and I have had them baked then put in a burger roll and they're excellent!

      I made these today with a few alterations for my hubby who is now on a low salt, vegetarian eating plan. I used cooked millet (cooked until very soft) as I didn't have bread crumbs. They turned out great. I didn't want to bother with pan frying, like so many of the veg patties out there. I'll be making many more, altering spices for variety, and freezing them. Thanks Neil!
