This simple roasted tomato basil soup uses roasted fresh tomatoes, basil and herbs. It's a healthy budget recipe using ordinary or budget tomatoes.

A bowl of simple roasted tomato basil soup garnished with freshly chopped basil. To the right salt and pepper cellars at the back a basked of sliced bread.

Folks, there’s nothing quite like a bowl of homemade tomato soup, is there?

And this simple roasted tomato basil soup is just so perfect for this time of year, as the weather cools.

It's made with freshly roasted tomatoes which brings out their natural sweetness and flavour.

Then adding garlic, onion, fresh basil and a few carefully chosen herbs and spices makes it into a deliciously rich and comforting soup.

The great thing about this recipe is that you don't need expensive vine tomatoes to make it.

Use whatever fresh tomatoes are available, including budget or salad tomatoes, as it's the roasting process that gives the soup it's deep satisfying flavour.

Overhead view at the bottom a bowl of roasted tomato basil soup garnished with chopped basil, and a soup spoon and salt and pepper cellars to the right. Above the rest of the soup in a large saucepan with a soup ladle in.

If you don't think your tomatoes aren't particularly flavoursome, don't worry.

We add a can of chopped tomatoes just to boost the tomato flavour which gives a consistently delicious result every time.

And if you don't fancy roasting tomatoes or you're looking for a much quicker soup to make then head on over to my popular simple skinny tomato soup recipe instead.

You'll find that recipe and this roasted tomato basil soup both naturally vegetarian and vegan.

    FAQ's

How Many Calories Are In This Simple Roasted Tomato Basil Soup?

There are 176 calories per serving of this recipe.

What Tomatoes Are Best For Roasted Tomato Soup?

You really don't need to use expensive vine tomatoes for this particular recipe. Roma, plum and vine tomatoes are excellent, but ordinary salad tomatoes and budget tomatoes work here too.

Can I Make This Soup Without The Canned Tomatoes?

Absolutely. If on roasting your tomatoes and adding them to the saucepan, prior to adding the tin of tomatoes it tastes perfect to you, then do not add!
The idea behind this recipe is that roasting whatever fresh tomatoes you have available brings out their natural sweetness, while the basil, thyme and spices add plenty of flavour.

How Do I Make The Soup Thinner?

If your soup is too thick, simply stir in a little extra vegetable stock or hot water until it reaches the consistency you prefer.

How Do I Make The Soup Thicker?

If your tomato soup is too thin, mix a tablespoon of corn flour with some cold water to create a paste and stir it into the soup whilst its still simmering.

Can I Make This Tomato Basil Soup Creamy?

If you prefer a creamy soup, you can stir in a small amount of cream, crème fraîche or coconut milk just before serving. Just be aware this will alter the flavour of the recipe and the nutritional label below.

Can I Make This Soup Ahead Of Time?

Yes, and the flavour can actually become even better after the soup has had time to sit and the herbs and spices have infused. Allow the soup to cool, transfer it to a covered container and refrigerate until you're ready to reheat it.

How Long Does Roasted Tomato Basil Soup Keep?

Store the cooled soup in an airtight container in the refrigerator for up to 3–4 days.

    How To Reheat?

Reheat it gently in a saucepan over a medium heat until piping hot, stirring occasionally. Or in 1 minute bursts in a microwave stirring in between.

Can I Freeze Roasted Tomato Basil Soup?

Yes, this soup freezes really well, making it ideal for batch cooking. Allow it to cool completely, portion it into individual freezer containers and freeze for up to 3 months. Defrost overnight in the refrigerator before reheating, or reheat gently from frozen until piping hot.

What Can I Serve With Roasted Tomato Basil Soup?

A bowl of this tomato and basil soup with fresh tomatoes is delicious served with crusty bread, wholemeal bread, garlic bread or homemade croutons.

Can I Use Dried Basil Instead Of Fresh Basil?

I do recommend fresh basil because it gives this soup its classic fresh tomato and basil flavour. Dried basil may work but not as well.

sounds delicious Neil. I am not a massive tomato fan so I like to make a similar soup but with lots of red capsicums too. Amazing how the roasting boosts the flavour ...

Thanks so much, Sherry! 😊 I love the idea of adding lots of red capsicums too — I bet they add a lovely sweetness to the soup. And you're absolutely right, roasting really does transform the flavour of both tomatoes and peppers!
