It's made with freshly roasted tomatoes which brings out their natural sweetness and flavour.
Then adding garlic, onion, fresh basil and a few carefully chosen herbs and spices makes it into a deliciously rich and comforting soup.
The great thing about this recipe is that you don't need expensive vine tomatoes to make it.
Use whatever fresh tomatoes are available, including budget or salad tomatoes, as it's the roasting process that gives the soup it's deep satisfying flavour.

- Medium Sized Fresh Tomatoes - any variety.
- Garlic Cloves - use fresh rather than garlic powder.
- Olive Oil - just use cooking olive oil.
- Freshly Ground Salt and Black Pepper
- Dried Thyme - use fresh if you want to.
- Dried Oregano - use fresh if you want to.
- Large Onion
- Smoked Paprika
- Ground Cumin
- Vegetable Stock/Vegetable Broth
- Fresh Basil - use fresh not dried for the best results.
- Tinned Chopped Tomatoes
- Granulated Sugar, optional – only if the tomatoes are particularly acidic.

How To Make Simple Roasted Tomato Basil Soup
Detailed instructions are in the recipe card below. But here is a quick step by step guide of how to make this roasted tomato basil soup recipe:

Steps 1-3
- Preheat the oven to 180°C Fan.
- Cut tomatoes in half.
- Place on a large baking / roasting tray with the peeled garlic cloves scattered amongst the tomatoes.

Step 4
- Drizzle olive oil over then grate some salt and black pepper and scatter the dried thyme and dried oregano.

Step 5
- Roast the tomatoes until soft and beginning to caramelise around the edges.

Step 6
- Whilst the tomatoes are roasting, heat the remaining olive oil in a large saucepan and sauté the chopped onion until softened.

Step 7
- Stir the smoked paprika and ground cumin into the softened onion.

Step 8
- Scrape the roasted tomatoes, garlic and all the juices from the roasting tray into the saucepan with the onion then add the stock, chopped basil and chopped tomatoes. Stir well.

Step 9
- Bring the soup to a boil, then reduce to a simmer, stirring occasionally.

Step 10
- Remove soup from heat and using a stick blender or food processor blend the soup until smooth.

Step 11
- Return soup to pan and season to taste. If required stir in the optional sugar.

Step 12
- Serve in bowls and garnish with freshly chopped basil.

You really don't need to use expensive vine tomatoes for this particular recipe. Roma, plum and vine tomatoes are excellent, but ordinary salad tomatoes and budget tomatoes work here too.

Absolutely. If on roasting your tomatoes and adding them to the saucepan, prior to adding the tin of tomatoes it tastes perfect to you, then do not add!

If your soup is too thick, simply stir in a little extra vegetable stock or hot water until it reaches the consistency you prefer.

If your tomato soup is too thin, mix a tablespoon of corn flour with some cold water to create a paste and stir it into the soup whilst its still simmering.
Can I Make This Tomato Basil Soup Creamy?
If you prefer a creamy soup, you can stir in a small amount of cream, crème fraîche or coconut milk just before serving. Just be aware this will alter the flavour of the recipe and the nutritional label below.

Equipment
Ingredients
- 12 medium fresh tomatoes approximately 1.5kg, any variety, washed and halved
- 4 cloves garlic peeled
- 2 tablespoon olive oil
- Freshly Ground Salt and Black Pepper
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- 1 large onion chopped
- 1 teaspoon smoked paprika
- ½ teaspoon ground cumin
- 500 ml vegetable stock
- 2 tablespoon fresh basil chopped, plus extra for garnish
- 1 x 400g can chopped tomatoes
- 1 teaspoon granulated sugar optional – only if the tomatoes are particularly acidic
Instructions
- Preheat the oven to 180°C Fan.
- Wash tomatoes, remove any green stalks and cut them in half.
- Place the tomatoes cut-side up on a large baking tray and scatter the peeled garlic cloves amongst the tomatoes.
- Drizzle 1 tablespoon olive oil over the tomatoes and garlic. Grate some salt and black pepper over then scatter the dried thyme and dried oregano.
- Roast for 35–45 minutes, until the tomatoes are soft and beginning to caramelise around the edges.
- Whilst the tomatoes are roasting, heat the remaining 1 tablespoon of olive oil in a large saucepan over a medium heat. Add the chopped onion and cook for 5–7 minutes, stirring occasionally, until softened.
- Stir the smoked paprika and ground cumin into the softened onion and cook for 1 minute.
- Scrape the roasted tomatoes, garlic and all the juices from the roasting tray into the saucepan with the onion then add the stock, chopped basil and chopped tomatoes. Stir well.
- Bring the soup to a boil, then reduce to a simmer for 15–20 minutes, stirring occasionally.
- Remove soup from heat and using a stick blender or food processor blend the soup until smooth.
- Return to pan and season to taste with the salt and pepper and if required stir in the optional teaspoon of sugar.
- Serve in bowls and garnish with freshly chopped basil.
