    This chicken stew with tomatoes and potatoes is a beautiful Mediterranean all in one pot style chicken dish.

    Packed with protein and nutrients, this tomato-based stew is both healthy and delicious. Perfect for any time of the year!

    Chicken stews like my quick healthy chicken stew feature regularly in our house.

    I often use that chicken stew as the base for varations using different herbs and spices. And that's exactly how this recipe came about.

    It reminds me of holidays spent in the Med going to diffferent restaurants and sampling many different delicious Mediterranean chicken stews!

    This chicken stew will satisfy your taste buds and leave you feeling full. It's a great weeknight dinner stew!

    Its full of delicious healthy vegetables and the tomato sauce is flavoured with garlic, oregano and paprika.

    There's no stock needed because the juices of the chicken mingle with the spices and tomatoes creating their own delicious sauce.

    The recipe uses just a few simple ingredients but creates a flavourful and satisfying meal that's sure to become a family favourite.

    You could also serve this chicken stew with tomatoes and potatoes if you're feeding a crowd.

    Ingredients

    All of the ingredients for the chicken stew with tomatoes and potatoes laid out on a table.
    • Olive oil
    • Garlic Cloves
    • Onion
    • Carrot
    • Oregano
    • Paprika
    • Tinned Chopped Tomatoes
    • Chicken Breasts
    • Potatoes
    • Freshly Ground Salt And Black Pepper

    Step By Step Instructions

    Detailed instructions are in the recipe card below. But here is a quick step by step guide of how to make this chicken stew with tomatoes and potatoes recipe:

    Onion sautéd in a large casserole pot.

    Step 1

    • Heat the olive oil in a large casserole pot. Sauté the garlic and onion until softened.
    Diced carrot stirred in with the sautéd garlic and onion.

    Step 2

    • Add the carrot and continue to cook.
    Oregano, paprika and tomatoes added to casserole pot.

    Step 3

    • Stir in the oregano, paprika and tomatoes.
    Chicken and potatoes added to casserole pot.

    Step 4

    • Add the chicken and potatoes, mix well. Cover pan with a lid and cook, simmering on a low heat. Stir occasionally to prevent sticking to the bottom.
    Chicken stew with tomatoes and potatoes seasoned to taste and ready to serve.

    Step 5

    • Season to taste and serve.

    Substitutions

    • Tinned Chopped Tomatoes - you could use tomato passata instead.
    • Chicken Breasts - I use skinless, boneless chicken breast fillets for convenience but you could also use chicken thighs or chicken on the bone. The cooking time will vary though.
    • Potatoes - I just use ordinary white potatoes but you could also use baby potatoes or even sweet potatoes.

    • Casserole pot
    • Kitchen scale
    • Chopping board
    • Kitchen knives

    Ingredients

    • 2 tablespoon olive oil
    • 2 cloves of garlic crushed.
    • 1 large onion sliced.
    • 1 large carrot diced.
    • ½ teaspoon dried oregano
    • ½ teaspoon paprika
    • 400 g tin chopped tomatoes.
    • 1 kg chicken breasts cut into bite size chunks pieces.
    • 1 kg white potatoes peeled and cut into small pieces.
    • Freshly Ground Salt and Black Pepper
    Metric - US Customary

    Instructions

    • Gently heat the olive oil in a large casserole pot and sauté the garlic and onion for about 5 minutes until softened.
    • Add the carrot and continue to cook everything for a further 2 minutes.
    • Stir in the oregano, paprika and tomatoes cook until simmering.
    • Add the chicken and potatoes, mix well, and cover the pan with a lid and cook, simmering on a low heat for about 45 minutes. Stirring occasionally to prevent sticking to the bottom.
    • Season to taste and serve.

      It looks comforting and loaded with flavours! Though it's already spring, it still feels quite chilly in the mornings and evenings, so this would definitely be perfect for the dinner table.

      This sounds like some mighty tasty comfort food, Neil! We're in that weird time of the year when one day is cold and chilly and the next day is sunny and hot. I'm thinking this stew would be great on one of the cloudy, cold days! Love all of the tomatoes in there!
