    Ingredients

Cranberry and white chocolate flapjacks ingredients laid out on a table.
    • Unsalted Butter
    • Demerara / Light Brown Sugar
    • Golden Syrup
    • Porridge Oats
    • Dried Cranberries
    • White chocolate

    See recipe card for quantities.

    Step By Step Instructions

Detailed instructions are the recipe card below. But here is a quick step by step guide of how to make cranberry and white chocolate flapjacks:

A greased and lined with greaseproof paper baking tin.

    Step 1

    • Before you start making the flapjack mix, preheat oven to 180C degrees (Fan).
    • Grease and line the bottom and sides of a square baking tin (see equipment list) with greaseproof / nonstick parchment paper.
Unsalted butter, sugar and golden syrup melted together in a large saucepan with a spatula in.

    Step 2

    • In a medium pan, gently melt the butter, sugar and golden syrup over a low heat until softened.
Oats and cranberries stirred into the melted mixture.

    Step 3

    • Stir in the oats and cranberries.
White chocolate pieces stirred into the cranberry and oat mixture.

    Step 4

    • Allow the oat mixture to cool then stir in the white chocolate pieces / white chocolate chips.
Cranberry and white chocolate flapjack mixture pressed into a square baking tin.

    Step 5

    • Spoon the oat mixture into the prepared baking tin and press down all over.
Baked cranberry and white chocolate flapjack slab in baking tin.

    Step 6

    • Bake for 15-20 minutes until golden brown (cooking time may vary depending on your oven).
Cooked cranberry and white chocolate slab still in baking tin and sitting on wire baking rack.

    Step 7

    • Leave in the tin placed on a wire rack to cool.
Melted white chocolate spread over the top of the cranberry and white chocolate slab.

    Step 8

    • Once cooled melt the rest of the chocolate and spread it over the top of the flapjack slab.
Nine cranberry and white chocolate flapjack squares on a chopping board.

    Step 9

    • Once the chocolate has set remove the oat slab from the tin, place on a wooden board and cut into 9 squares.

    Substitutions

    • Unsalted Butter - you could use cooking margarine instead.
    • Demerara / Light Brown Sugar
    • Golden Syrup - you could use honey but the flapjack will taste different and may fall apart.
    • Porridge Oats - a budget bag of breakfast porridge oats is fine. Don't use quick cooking oats or jumbo oats It's rolled oats you want to use here.
    • Dried Cranberries - use only dried cranberries as fresh or frozen will make the mixture too runny.
    • White chocolate - you can make these flapjacks without white chocolate. Or you can substitute with dark chocolate.

I use this 8" (20cm x 20cm) square cake pan for this recipe.

It's great value for money and a kitchen essential.

Made with goldflon non stick coating it prevents food from sticking to the pan.

    FAQ's

    How To Store Cranberry Flapjacks?

The flapjacks will keep in an airtight container for up to 5 days. They are best kept cool and can be stored in the fridge which will help them hold their shape. Place some greaseproof paper between flapjack layers to stop them sticking together.

Why have my flapjacks fallen apart?

Slicing them into squares whilst they're still warm can often cause them to fall apart. Instead, score the slab in the tin into 9 squares and then place the tin in the fridge. This will cool them quicker and help them hold their shape.

    Can I freeze flapjacks?

You can freeze flapjacks. Wrap each square in plastic wrap and place it in the freezer. Ensure it's thoroughly defrosted before eating.

Sounds delicious Neil. I'm always fascinated by how the meaning of a words differ from Queen's (King's) English and US English and then Swedish. Flapjack, in the US is another way of describing an American pancake. Pancake or pannkaka in Swedish is a thin and eggy like a crepe. Anyway, your flapjacks look very festive...

Hey Ron, good to hear from you and thanks so much for your comment and recipe rating. I know what you mean about the words differing between our languages. It's fascinating how a flapjack differs. And a Scone in America is more like one of our Rock Cakes. And it's triangular too! Ha ha!

I think you're thinking of an American flapjack Charlie, which is as Ron said below, a pancake! But yeah you could still have these for breakfast if you wanted too! 🙂

These flapjacks look delicious, Neil. I have to say that I was surprised by them, though. Where I live, "flapjacks" are pancakes. But no matter, I eat one of these for breakfast with a cup of coffee any day!

Thanks Jeff. Yes, if you read the other comments there has been some confusion between the American and British "flapjacks". But these are most definitely British flapjacks and would still make a great treat for breakfast! 🙂

Cranberries and white chocolate are such a classic combination - especially during the holidays! Sometimes I like adding a bit of orange zest in there, too. Like Jeff mentioned, flapjacks means pancakes on this side of the pond, but I want to try this Scottish flapjack now! It would be a great addition to the holiday dessert table.

Orange zest is a great idea David. It could easily be added in with the flapjacks to give this recipe a unique citrus zest. I love it. I'm going to try that on the next batch I make!

Thank you Sherry! These might melt in your heatwave there in Australia at the moment, ha ha! So keep them in the fridge if you do make them. You might have read the debate on the comments about what a flapjack is depending on where you come from. Surprised they're not in Australia though! Have a good one. 🙂
