I love flapjacks and so do you going by the popularlity of my easy healthier flapjacks recipe.
Well today, and seeing as it's Christmas I'm going all out with a traditional flapjacks recipe.
This cranberry and white chocolate flapjacks recipe has everything you would expect from such a recipe!
All the richness of butter, sugar and golden syrup combined with golden porridge oats. The perfect combination together.
And to add a twist and to make them even more festive I'm adding cranberries and white chocolate!
Now this is a baked flapjack recipe but if you want a festive no bake cranberry flapjacks recipe then do check that recipe out instead.
These cranberry white chocolate flapjacks are packed full of juicy sweet cranberries and white chocolate chunks.
And as if though that wasn't enough they're also topped with a decadent smooth layer of creamy white chocolate too!

Ingredients
- Unsalted Butter
- Demerara / Light Brown Sugar
- Golden Syrup
- Porridge Oats

Step By Step Instructions
Detailed instructions are the recipe card below. But here is a quick step by step guide of how to make cranberry and white chocolate flapjacks:
Step 1
- Before you start making the flapjack mix, preheat oven to 180C degrees (Fan).
- Grease and line the bottom and sides of a square baking tin (see equipment list) with greaseproof / nonstick parchment paper.
Step 2
- In a medium pan, gently melt the butter, sugar and golden syrup over a low heat until softened.
Step 3
- Stir in the oats and cranberries.
Step 4
- Allow the oat mixture to cool then stir in the white chocolate pieces / white chocolate chips.
Step 5
- Spoon the oat mixture into the prepared baking tin and press down all over.
Step 6
- Bake for 15-20 minutes until golden brown (cooking time may vary depending on your oven).
Step 7
- Leave in the tin placed on a wire rack to cool.
Step 8
- Once cooled melt the rest of the chocolate and spread it over the top of the flapjack slab.
Step 9
- Once the chocolate has set remove the oat slab from the tin, place on a wooden board and cut into 9 squares.
Substitutions
- Unsalted Butter - you could use cooking margarine instead.
- Demerara / Light Brown Sugar
- Golden Syrup - you could use honey but the flapjack will taste different and may fall apart.
- Porridge Oats - a budget bag of breakfast porridge oats is fine. Don't use quick cooking oats or jumbo oats It's rolled oats you want to use here.
- Dried Cranberries - use only dried cranberries as fresh or frozen will make the mixture too runny.
- White chocolate - you can make these flapjacks without white chocolate. Or you can substitute with dark chocolate.

How To Store Cranberry Flapjacks?
The flapjacks will keep in an airtight container for up to 5 days. They are best kept cool and can be stored in the fridge which will help them hold their shape. Place some greaseproof paper between flapjack layers to stop them sticking together.
Why have my flapjacks fallen apart?
Slicing them into squares whilst they're still warm can often cause them to fall apart. Instead, score the slab in the tin into 9 squares and then place the tin in the fridge. This will cool them quicker and help them hold their shape.
Can I freeze flapjacks?
You can freeze flapjacks. Wrap each square in plastic wrap and place it in the freezer. Ensure it's thoroughly defrosted before eating.

Equipment
Ingredients
- 115 g unsalted butter
- 115 g demerara / light brown sugar
- 70 g golden syrup
- 230 g porridge oats
- 60 g dried cranberries
- 160 g white chocolate
Instructions
- Preheat the oven to 180C. Grease and line the bottom and sides of an 8" / 20cm x 20cm square baking tin with greaseproof / parchment paper.
- In a large saucepan over a low heat, place the unsalted butter, sugar, and golden syrup. Stir and melt these ingredients together. Remove from the heat.
- Stir in the oats and cranberries mix well together. Allow to cool.
- Meanwhile roughly chop up 80g of the white chocolate and when the oats are cooled stir in the white chocolate pieces.
- Scrape the contents of the saucepan into the baking tin and press down all over with the back of a spoon ensuring an even covering.
- Bake for 15-20 minutes until golden brown.
- Once cooked remove from oven and leave in the tin placed on a wire rack to cool.
- Once cooled melt the remaining white chocolate and spread over the top of the flapjack.
- Allow the chocolate to set then carefully remove the oat slab from the tin, place on a wooden board and cut into 9 squares.

Sounds delicious Neil. I'm always fascinated by how the meaning of a words differ from Queen's (King's) English and US English and then Swedish. Flapjack, in the US is another way of describing an American pancake. Pancake or pannkaka in Swedish is a thin and eggy like a crepe. Anyway, your flapjacks look very festive...

Cranberries and white chocolate are such a classic combination - especially during the holidays! Sometimes I like adding a bit of orange zest in there, too. Like Jeff mentioned, flapjacks means pancakes on this side of the pond, but I want to try this Scottish flapjack now! It would be a great addition to the holiday dessert table.

Orange zest is a great idea David. It could easily be added in with the flapjacks to give this recipe a unique citrus zest. I love it. I'm going to try that on the next batch I make!
