    Leftover Roast Chicken Salad

    Leftover roast chicken salad is a great way to use up any leftover chicken. This delicious and easy to make salad is perfect for an easy weeknight dinner or packed lunch!

    Folks at this time of year and with the weather continuing to be lovely and warm I'm all about lots of salads.

    Like this leftover roast chicken salad!

    When it comes to a salad I like it to be as easy as possible to prepare as well as being a healthy option.

    Here I'm using chicken leftover from a Sunday roast.

    However if you don't have any leftover roast chicken you could easily make my quick healthy chicken salad instead.

    Or if you love the sound of this and still want to make it then just get some chicken breasts and make some shredded chicken using my quick method below!

    As I've mentiond many times before nothing goes to waste in our house.

    Roast chicken on a Sunday is one of my favourite things and this is the salad that I'll make with any leftover roast chicken. 

    You can check out some of the recipes other than salad that I might make with the chicken in the list below.

    Once we've had our share of the chicken on Sunday I allow it to cool and then separate the meat from the bones and put it in the fridge.

    I'll use the bones to make stock for chicken soup.

    This leftover roast chicken salad is such an easy salad to prepare for packed lunches.

    Or for that Monday night dinner when after a day at work you want something tasty but as little effort to make as possible!

    This leftover roast chicken salad is made with potatoes and frozen vegetables. Keeping it simple and inexpensive.

    You could easily substitute the vegetables that I suggest with your own choices though.

    Carrots go well as do other leftover veggies like broccoli.

    I've included my favourite light and creamy salad dressing with this delicious recipe too.

    It's made from Greek yogurt, reduced fat mayonnaise, Dijon mustard and lemon juice.

    I promise once you've tried that you just won't want to go back to full fat salad dressings!

    You can make this easy salad recipe low carb by leaving out the potatoes and then serve this healthy salad on top of crispy lettuce instead.

    This leftover roast chicken salad is also a perfect way to use up any leftover rotisserie chicken or leftover turkey from Christmas or Thanksgiving.

    As far as simple salads go I think this is the best chicken salad for using up leftover roast chicken.

    It's a great recipe to help you during a busy week.

    This hearty salad will give you a quick lunch. It's such an easy recipe to quickly make up to take to work as a packed lunch!

    Ingredients

    • Cooked Shredded Roast Chicken
    • Red Onion
    • Potatoes
    • Frozen Peas
    • Frozen Sweetcorn
    • Pine Nuts (toasted)
    • Fat Free Greek Yogurt
    • Reduced Fat Mayonnaise
    • Dijon Mustard
    • Lemon Juice
    • Freshly Ground Salt And Black Pepper

    Substitutions

    • Cooked Shredded Roast Chicken - use roasted chicken, the leftovers of a whole chicken, leftover grilled chicken or leftover chicken breast.
    • Red Onion - you could use spring onion instead.
    • Potatoes
    • Frozen Peas - you could use green beans or broccoli instead.
    • Frozen Sweetcorn - you could use diced carrots instead.
    • Pine Nuts (toasted) - you could leave out or maybe use toasted pecan nuts.
    • Fat Free Greek Yogurt - full fat is fine but will alter the nutritional values.
    • Reduced Fat Mayonnaise - used for the creamy dressing you can leave out if you just want a yogurt based dressing.
    • Dijon Mustard
    • Lemon Juice - freshly squeezed is best but from a bottle for quickness is also fine.
    • Freshly Ground Salt And Black Pepper

    So as I mentioned earlier if you don't have any leftover roast chicken you could easily make some shredded chicken instead. Here's how :-

    How To Make Shredded Chicken (Easy!)

    1. Place a large chicken breast into a saucepan of 450ml chicken stock. 
    2. Bring to the boil then reduce heat to simmering.
    3. Let the chicken simmer until cooked through. About 10 minutes.
    4. Remove the chicken, place it on a chopping board and shred it using two forks.

    How To Make Leftover Chicken Salad

    Detailed instructions are the recipe card below. But here is a quick step by step guide of how to make this classic chicken salad:

    1. Cook the potato cubes in a pot of boiling salted water until tender then drain.
    2. Cook the peas and frozen sweetcorn then drain.
    3. Make the dressing.
    4. Place everything into a large bowl and toss to coat everything well in the dressing.
    5. Allow to chill in fridge for at least 1 hour before serving.

    How To Store Leftover Roast Chicken Salad?

    Store this salad in an airtight container in the fridge for up to three days. I do not recommend freezing this salad.

    Equipment

    • Saucepans
    • Colander
    • Kitchen scale
    • Chopping board
    • Kitchen knives
    • Measuring spoons
    • Pyrex mixing glass bowl
    • Large mixing bowl
    • Wooden spoon

    Ingredients

    Salad

    • 280 g cooked shredded roast chicken.
    • ½ small red onion finely diced.
    • 2 medium white potatoes cut into small cubes.
    • 100 g frozen peas
    • 100 g frozen sweetcorn
    • 20 g pine nuts toasted.

    Salad Dressing

    • 100 ml No fat Greek yogurt
    • 100 ml Reduced fat Mayonnaise
    • 1 teaspoon Dijon mustard
    • 2 tablespoon lemon juice
    • Freshly Salt and Black Pepper to season
    Metric - US Customary

    Instructions

    • Place the potato cubes in a pot of boiling salted water and cook until the potatoes are just tender but not falling apart. You want a bit of a bite to them. Then drain using a colander.
    • Either microwave the peas and frozen sweetcorn until cooked or simmer together in a pot until cooked through. Then drain.
    • Place all the dressing ingredients into a Pyrex glass jug mix well then season to taste.
    • Add the chicken, onion, cooked vegetables, pine nuts and dressing into a large mixing bowl and toss to coat everything well.
    • Allow to chill in fridge for at least 1 hour before serving.

      Ah, I love chicken salad! We recently discovered that one of our stores here sells day-old rotisserie chicken already broken down into cold packs. We love picking those up for chicken salad!       I love using leftover chicken in salads (However, now with Daisy the amount of leftovers might not be enough for a salad haha). This looks and sounds soooo delicious - beautiful combination of textures and flavours!

      Like you, Neil, I love using all the parts and bones of a roast chicken, and leftover chicken salad is one of my favorites! I love all the veggies you included here, too! Not only does it stretch the salad a bit, but so healthy! A perfect way to add flavor and nutrition! Nice dressing, too! I try to add some yogurt to a mayonnaise dressing, too - but that has to be our secret - my fam would think it's sacrilege - they'll never know.
