I tweaked my 30-minute mushroom risotto recipe to make use of those Christmas or Thanksgiving leftovers and made this amazing risotto using leftover turkey.
It's not just a bland risotto either like many others you see. No, this one is tangy and creamy tasting, made with parmesan cheese.
There's also the addition of button mushrooms which give your risotto a slighty nutty flavour too which complements the creamy texture of the dish.
The mushrooms also absorb the flavours of the other ingredients in the risotto and enhance the overall richness of the dish.
This is a great leftover turkey recipe because if you've still got guests staying over during the festive period this recipe will serve up to 6 people!
This quick healthy turkey risotto is ready in just 45 minutes and doesn't take much prep time either.

🔪 Step By Step Instructions
Detailed instructions are in the recipe card below. But here is a quick step by step guide of how to make this easy leftover turkey risotto recipe:
Step 1
- Heat olive oil and sauté the onion until softened.
Step 2
- Add the rice, then the stock. Reduce the heat, put the lid on and cook until the rice is tender and liquid absorbed.
Step 3
- While rice is cooking sauté the mushrooms and garlic. Season with salt and pepper.
Step 4
- Stir the sautéed mushrooms into the cooked rice. Add the parmesan cheese, cooked turkey meat. Stir well until all heated through. Turn off heat.
Step 5
- Serve the risotto garnished with a little grated cheddar cheese.
📖 Substitutions
- Olive Oil - you could use low calorie cooking oil spray. If using olive oil use a cooking olive oil. Not extra-virgin olive oil.
- Onion - you could use shallots instead.
- Arborio Rice - this is the best risotto rice to use to give you a creamy turkey risotto recipe. I don't recommend any other types of rice for traditional risotto recipes.
- Chicken Stock / Chicken Broth - you could use homemade turkey stock made from a leftover roast turkey carcuss. Otherwise use good quality chicken stock.
- Button Mushrooms - you can use other kinds of white fresh mushrooms chopped.
- Garlic Cloves - use fresh garlic cloves.
- Parmesan Cheese - use grated parmesan. If you don't have parmesan use another hard cheese like Grand Padano
- Cooked Turkey Meat - use leftover roast turkey.
- Freshly Ground Salt And Black Pepper
- Grated Cheddar Cheese (optional garnish).

How To Store Leftover Risotto?
Risotto is much better when it's made and served fresh although you can store leftovers for 2 - 3 days in an airtight container and re-heat gently on your stove (but not in a microwave).
Can You Freeze Leftover Risotto?
I'm not a big fan of freezing any leftover risotto so I wouldn't recommend it here.

Equipment
Ingredients
- 2 tablespoon olive oil
- 1 large onion diced.
- 350 g Arborio rice or similar
- 600 ml hot chicken stock
- 200 g button mushrooms sliced.
- 2 cloves garlic crushed.
- 50 g parmesan cheese grated.
- 250 g cooked turkey meat shredded or chopped.
- Freshly Ground Salt And Black Pepper
- Some grated cheddar cheese for garnish optional.
Instructions
- In a medium sized pan gently heat 1 tablespoon of the oil over a medium heat and sauté the onion for about 3-4 minutes until softened.
- Add rice, stir for a further minute then add the stock. Reduce the heat to low put a lid on the pot and cook for 15 - 20 minutes until the rice is just tender and the liquid absorbed. Add more hot water if required.
- Meanwhile whilst rice is cooking, in a separate large frying pan gently heat the rest of the olive oil and sauté the mushrooms and garlic for about 8 minutes. Season with salt and pepper.
- Stir the sautéed mushrooms with their juices into the cooked rice then add the parmesan cheese and cooked turkey meat. Stir well until all heated through. Turn off heat.
- Serve the risotto garnished with a little grated cheddar cheese.
