🔪 Step By Step Instructions
Detailed instructions are in the recipe card below. But here is a quick step by step guide of how to make this easy one pot veggie pasta recipe:
Step 1
- Gently heat the oil in a large casserole pot.
Step 2
- Sauté the garlic, onion, and bell peppers.
Step 3
- Add the mushrooms and cook together.
Step 4
- Stir in the tomato paste, chopped tomatoes, herbs, pasta, and vegetable stock.
Step 5
- Cook the recipe making sure to stir from time to time to prevent any sticking.
Step 6
- Turn off the heat and stir in the cream cheese.
Step 7
- Season to taste with the salt and pepper and serve garnished with the freshly grated cheese.
📖 Substitutions
- Olive Oil - just use cooking olive oil. No need to use expensive extra virgin olive oil here.
- Cloves Garlic - I recommend only using fresh garlic cloves here which are best for flavour rather than garlic granules.
- Onion - I use a brown onion but you could also use a red onion.
- Red Pepper - any colour of bell pepper will do.
- Green Pepper - any colour of bell pepper will do.
- Button Mushrooms - I like button mushrooms but you can definitely use other types of white mushrooms or even chestnut mushrooms.
- Tomato Paste - you could use tomato sauce or tomato puree instead.
- Tinned Chopped Tomatoes - you could use tomato passata instead.
- Dried Mixed Herbs - I just use dried herbs for convenience here, you could also use dried basil, oregano or thyme.
- Whole Wheat Penne Pasta - any kind of short whole wheat pasta will work here. You can use ordinary pasta if you want but it will alter the nutritional label and also the cooking time.
- Vegetable Stock - use a good quality vegetable stock.
- Low Fat Cream Cheese - you can use a full fat soft cheese if you want but that will alter the nutritional label.
- Freshly Grated Salt and Black Pepper
- Grated Mozzarella or Cheddar Cheese (optional garnish)

Ingredients
- 1 tablespoon olive oil
- 2 cloves garlic crushed.
- 1 medium onion diced.
- 1 medium red pepper diced.
- 1 medium green pepper diced.
- 75 g button mushrooms sliced.
- 1 tablespoon tomato paste
- 1 x 400g tins of chopped tomatoes
- 1 teaspoon dried mixed herbs
- 225 g whole wheat penne pasta
- 450 ml vegetable stock
- 4 tablespoon low fat cream cheese
- Freshly Grated Salt and Black Pepper
- Grated Mozzarella or Cheddar Cheese to serve.
Instructions
- Gently heat the olive oil in a large casserole pot.
- Sauté the garlic, onion, and bell peppers until softened for about 3 to 4 minutes.
- Add the mushrooms, cook for a further 2 minutes.
- Stir in the tomato paste, chopped tomatoes, herbs, pasta, and vegetable stock.
- Bring to the boil and then turn down to simmer for about 10 minutes until the pasta is cooked. Stir from time to time to prevent any sticking.
- Turn off the heat and stir in the cream cheese.
- Season to taste with the salt and pepper and serve garnished with the freshly grated cheese.
