This recipe is a great one for home cooks looking for a simple yet impressive side dish!
You just need a bag of decent quality parsnips to make these. So this is definitely a budget friendly side dish.
You'll need to peel your parsnips and cut them into baton shapes.
It's also possible to use smaller or baby parsnips which might not require peeling and only need the ends cut off.
I usually put my parsnips into the oven roughly 30 minutes before my roast is finished cooking.
Doing that gives the roast time to rest whilst the veggies can finish cooking and you can get anything else prepared then too. Like the stuffing.
Test your parsnips at the end of cooking to ensure they are tender by inserting a sharp knife. Cook for longer if not yet ready.

Steps 1 & 2
- Pre-heat oven to 190C fan.
- Place the baton parsnips into a roasting tin. Drizzle over the sunflower oil and honey.
Step 3
- Roast parsnips until crisp. Turn once during cooking.
Step 4
- Season to taste and serve with the parsley sprinkled over.

- Parsnips - if you have a large roasting dish you could roast both carrots and parsnips together to save time and dishes. And add an extra veggie!
- Sunflower Oil - I use sunflower oil but olive oil or any good quality vegetable oil will also work.
- Honey - use runny honey or to make this recipe vegan use maple syrup instead.
- Freshly Ground Salt and Black Pepper
- Fresh Parsley - optional garnish. You could also use fresh or dried thyme.

How To Keep Warm?
Whilst you are preparing the rest of your meal you can transfer the honey glazed parsnips to a warm serving bowl. They'll keep warm and you just need to stir and garnish them before serving.
Can I Store Leftovers?
I do recommend serving these fresh. They can be stored in the fridge for 1-2 days though but on reheating in the oven they may loose their crispiness.

Yeah, I love parsnips for their natural sweetness and earthiness. And with the addition of honey, these roasted parsnips are so good. I would add a touch of fresh herbs like thyme or minced rosemary.
