This one is an oven baked frittata recipe and made in a quiche dish (see Equipment list).
If you don't have a quiche dish you can easily make this in an ovenproof skillet / oven proof frying pan / cast iron pan or other suitable oven baking dish.
Once baked, what you end up with is a delicious veggie stuffed egg dish, resembling a thick golden crusted cheesy omelette.
This oven baked vegetable frittata recipe is low in calories at just 109 calories per serving. Assuming you are serving 8 people with it.
It's similar to a quiche but is a healthier option because it doesn't have a crust.
A frittata is essentially a crustless quiche and is suitable for vegetarians or those on a low-carb or gluten-free diet.
It's a great source of protein as well as vitamin A and C.

So whilst it's baking in the oven, smelling amazing, you can get on with other things. Like chopping up a simple side salad to go with it!

Step By Step Instructions
Detailed instructions are in the recipe card below. But here is a quick step by step guide of how to make this oven baked vegetable frittata recipe:
Step 1 & 2
- Preheat oven to 200C (Fan).
- Heat olive oil. Sauté the onion, garlic, and red pepper over a medium heat until softened. Turn off heat.
Step 3
- Stir in frozen peas and red chilli flakes to warm peas through.
Step 4
- Whisk eggs and yogurt together. Season.
Step 5
- Grease an ovenproof quiche / flan dish (see Equipment).
Step 6
- Add sauteed vegetables to quiche dish and mix in sliced mushrooms.
Step 7
- Pour egg mixture over, season and sprinkle over the grated cheese.
Step 8
- Bake frittata until the eggs have set, top is browned, and cheese is bubbling. Cooking time may vary depending on your oven.
Step 9
- Allow to rest. Cut veggie frittata into wedges and serve with a simple green salad of lettuce, cucumber, spring onions and tomato.
Substitutions
- Olive Oil - any kind of cooking oil will work here.
- Onion - you could use shallots instead.
- Garlic Cloves
- Red Bell Pepper - you can use any colour of bell peppers.
- Frozen Peas - you could use chopped cooked / roasted vegetables like courgettes or broccoli.
- Red Chilli Flakes - optional if you don't like spice miss this out.
- Freshly Ground Salt And Black Pepper
- Large Eggs - I use free range large sized eggs. Any good quality eggs will do.
- Fat Free Yogurt - fat free Greek yogurt is fine or plain.
- Baby Button Mushrooms - you can use any kind of chopped mushrooms.
- Low Fat Grated Cheese - Mozzarella or Cheddar Cheese both work.

- 1 tablespoon olive oil
- Small Onion sliced
- 2 Garlic Cloves crushed
- 1 red bell pepper deseeded and sliced
- 150 g Frozen peas
- ยฝ teaspoon Red Chilli Flakes
- Freshly Ground Salt and Black Pepper
- 6 large eggs
- 3 tablespoon fat free yogurt
- 200 g Baby Button Mushroom sliced
- 75 g low fat grated cheese mozzarella / cheddar
Instructions
- Preheat oven to 200C Fan.
- Gently heat olive oil in a non-stick frying pan and sauté the onion, garlic, and red pepper for about 3 minutes until softened. Turn off heat.
- Stir in frozen peas and red chilli flakes to warm peas through.
- Break the eggs into a medium mixing bowl, whisk eggs, add the yogurt, and beat together well, then season with salt and pepper.
- Spray a medium-sized ovenproof quiche / flan dish with low-calorie cooking spray or wipe with a little olive oil.
- Add sauteed vegetables to quiche dish and mix in sliced mushrooms.
- Pour egg mixture over, season and sprinkle over the grated cheese.
- Place in the centre of oven and bake for 25-30 minutes until the eggs have set and the frittata is browned, and cheese is bubbling.
- Remove from the oven and allow to rest for 5 minutes. Cut into wedges and serve with a simple salad of lettuce, cucumber, spring onions and tomato.
