This oven baked vegetable frittata recipe is easy to make and adaptable too. Budget friendly, this family dinner takes under an hour and is served with just a green salad!

Oven baked vegetable frittata served on a plate with a green salad and sliced tomotoes. Knife and fork to the side. Rest of frittata in serving dish in the background along with a bowl of salad.

This oven baked vegetable frittata is a great recipe to serve up for lunch or healthy dinners.

You could of course also enjoy this easy vegetable frittata recipe for breakfast / brunch.

Or try out one of my other frittata recipes like my red pepper and spinach frittata which isn't baked and is made in my cast-iron skillet.

Most frittatas are made on the stove in iron skillets or non stick frying pans.

This one is an oven baked frittata recipe and made in a quiche dish (see Equipment list).

If you don't have a quiche dish you can easily make this in an ovenproof skillet / oven proof frying pan / cast iron pan or other suitable oven baking dish.

Once baked, what you end up with is a delicious veggie stuffed egg dish, resembling a thick golden crusted cheesy omelette.

A slice or oven baked vegetable frittata served on a plate with a salad. Knife and fork to the side. Salad bowl and frittata dish in the background.

This oven baked vegetable frittata recipe is low in calories at just 109 calories per serving. Assuming you are serving 8 people with it.

It's similar to a quiche but is a healthier option because it doesn't have a crust.

A frittata is essentially a crustless quiche and is suitable for vegetarians or those on a low-carb or gluten-free diet.

It's a great source of protein as well as vitamin A and C.

Frittatas make wonderful healthy breakfasts and if I'm enjoying a lie in they're often one of my go-to easy recipes that I'll choose for a leisurely weekend.

My oven baked vegetable frittata only requires 15 minutes prep time and 30 minutes baking time.

So whilst it's baking in the oven, smelling amazing, you can get on with other things. Like chopping up a simple side salad to go with it!

I do enjoy quiches and frittatas, but for some reason I don't make them all that often. I need to change that! As Sherry said, this is a great way to use up extra bits of veggies that might be hanging around in the fridge. Yum!

I make more quiches in summer because they're great for picnics and light salad dinners. I make more frittatas in winter because things seem to go off quicker and I'm more lazy in winter. Ha ha! Thanks David!
