    This healthy chicken quinoa salad is a great way to use up any leftover chicken you might have from your roast Sunday dinner.

    Or you could just buy pre-cooked frozen chicken breasts and chop or shred them up.

    It takes just 15-minutes to prep this chicken quinoa salad and roughly 30 minutes to cook.

    🥘 Ingredients

    • Garlic Clove
    • Dijon Mustard
    • White Wine Vinegar
    • Paprika
    • Lemon
    • Uncooked Quinoa
    • Chicken Stock
    • Flaked Almonds
    • Cooked Chicken

    🔪 Step By Step Instructions

    Detailed instructions are in the recipe card below. But here is a quick step by step guide of how to make this quinoa chicken salad recipe:

    All of the dressing ingredients in a small glass pyrex bowl.

    Step 1

    • Put all of the dressing ingredients except the lemon into a bowl.
    Whisk in bowl with dressing ingredients and lemon juicer in the background.

    Step 2

    • Gradually whisk in the lemon juice and taste it until it's at a stage where you like it and it's not overly lemony.

    Step 3

    • Rinse the quinoa in cold water.
    Quinoa in a saucepan of chicken stock.

    Step 4

    • Cook the quinoa in a saucepan in chicken stock. Then drain and allow it to cool.
    Flaked almonds toasted in a non-stick frying pan.

    Step 5

    • Whilst cooking quinoa, lightly toast the flaked almonds. Remove and set aside.
    Quinoa, chicken, celery, onion, apples and almonds combined in a large glass bowl.

    Step 6

    • Combine cooled quinoa with the chicken, celery, onion, apples, and almonds.

    Step 7

    • Pour over the dressing, toss with the salad and season to taste.

    📖 Substitutions

    • Extra Virgin Olive Oil - I recommend only using extra virgin olive oil for the dressing.
    • Garlic Clove - use fresh garlic only.
    • Dijon Mustard - you could substitute / experiment with other mustards.
    • White Wine Vinegar - you could also use cider vinegar.
    • Paprika - you can leave out if you want to.
    • Lemon - use freshly squeezed for the best flavour and freshness.
    • Uncooked Quinoa - quinoa is gluten-free so that makes this quinoa chicken salad recipe suitable for those with gluten intolerance.
    • Chicken Stock - you could also use vegetable stock.
    • Flaked Almonds - these add a delicious crunch to the recipe.
    • Cooked Chicken - I just buy frozen pre-cooked chicken breast strips. I allow them to defrost, then I dice them. Or you could cook and shred chicken breasts or use leftover roast chicken.
    • Celery - adds a delicious crunch.
    • Red Onion - you could substitute with spring onions or scallions instead.
    • Red Apples - use red apples which are sweet, juicy and have thin skin as opposed to green apples which would give the salad a sour taste.
    • Freshly Ground Salt and Black Pepper

    • Saucepans

    • Chopping board

    Ingredients

    For The Dressing: -

    • 4 tablespoon extra virgin olive oil
    • 1 garlic clove crushed.
    • 3 teaspoon Dijon mustard
    • 1 teaspoon White Wine Vinegar
    • ¼ teaspoon paprika
    • 1 lemon freshly squeezed.

    For The Salad: -

    • 100 g uncooked quinoa
    • 250 ml chicken stock
    • 25 g flaked almonds.
    • 200 g cooked diced or shredded chicken*
    • 1 stick celery diced.
    • ½ red onion finely diced.
    • 2 red apples cored and chopped into bite size pieces.
    • Freshly Ground Salt and Black Pepper
    Metric - US Customary

    Instructions

    Make The Dressing: -

    • Put all the dressing ingredients except the lemon juice into a small Pyrex bowl and whisk.
    • Then begin to add the lemon juice whisking gradually and tasting until it's at a stage where you like it and it's not overly lemony.

    For The Salad: -

    • Rinse the quinoa in cold water using a sieve.
    • Then place the quinoa in a saucepan with the chicken stock. Cook, simmering for about 15 minutes until soft then drain and allow it to cool.
    • Whilst the quinoa is cooking lightly toast the flaked almonds in a non-stick frying pan over medium heat, toss frequently until golden, about 2 minutes. Remove and set aside.
    • Once the quinoa has cooled add it to a large bowl with the chicken, celery, onion, apples, and almonds. Combine well.
    • Pour over the dressing, toss with the salad, season to taste.
    • Serve

      I make a similar salad in summer but i usually take the easy way out and use a packet of pre-cooked brown rice and quinoa. Oh yes and i always add in some avocado! Delicious and good for you.
