- Put all of the dressing ingredients into a jar and shake well.

Ingredients
- 500 g cherry tomatoes quartered.
- ยฝ red onion finely chopped.
- 3 tablespoon extra virgin olive oil.
- 2 tablespoon red wine vinegar.
- 1 tablespoon fresh parsley finely chopped.
- ¾ teaspoon salt.
- ยผ teaspoon freshly ground black pepper.
Instructions
- Put the tomatoes into a small bowl and mix with the onion.
- Place all the oil, vinegar, parsley, salt, and pepper into a jar and shake well together.
- Pour the dressing over, coating all the tomatoes then mix well together. Check seasoning.
- Place into fridge for at least 2 hours.
- Before serving stir well again.
