Lentils are just great for bulking out a meal and really cheap.
In this lentil recipe I've used green lentils but you can also use Puy lentils.
Puy lentils are roughly the same as green lentils. The only main differences being that Puy lentils are a lentil variety from a specific area of France and you'll probably find them to be more expensive that green lentils!
All kinds of sausages be they meat, vegetarian or veggie go well with the lentils here.
We love our chicken sausages as they tend to be less fatty than traditional pork or beef ones. So that's what I've used here.
When you dig into your first bite of this sausage and lentil stew you'll experience a deep rich spicy flavour.
Do experiment with the spiceness here by varying the amount of dried crushed chillies added or by omitting them altogether if you prefer.

Sausage and Lentil Stew Recipe
You can keep this stew in the fridge for 2 - 3 days. After that I'd recommend freezing it. Make sure it's completely cooled before freezing and portion it up into individual containers.
To reheat allow the stew to defrost fully first then it can be easily reheated in the microwave or on your stove top.
Feel free to adapt this recipe to make it your own by adding your choice of sausages and why not include some other vegetables like peas into the recipe whilst it cooks too?

Equipment
Ingredients
- 2 tbsp. olive oil
- 8 chicken sausages
- 1 large onion thinly sliced
- 1 red pepper sliced
- 400 g can chopped tomatoes
- 1 tablespoon tomato paste
- 150 g green / puy lentils
- 450 ml chicken stock
- 125 ml red wine
- ยผ tsp. dried mixed herbs
- ยผ tsp. dried crushed chillies
- Salt and freshly ground pepper
Instructions
- Heat one tablespoon of olive oil in a stove proof casserole dish or a medium sized saucepan and fry the sausages for about 8 minutes turning frequently so they don't burn. Transfer to a plate.
- Add another tablespoon of oil and gently fry the onion and pepper for about 5 minutes until softened.
- Add the can of tomatoes, tomato paste, lentils, stock, wine, herbs and chillies. Stir well. Cover the pan and simmer for about 30 minutes until the lentils are tender. Season to taste.
- Whilst the lentils are simmering away cut the sausages in half.
- Once the lentils are ready stir in the sausages.
- Serve with green vegetables like broccoli or some rustic bread.

I like your idea of going with lentils as a way to bulk out a meal - in fact, I think I have a package of lentils in the pantry right now. (I bought 2 by mistake last time!)
